Description

This green beans omelette Chilean style is a simple and delicious recipe, perfect for a quick meal or as a side dish. The combination of tender green beans with beaten egg and onion and garlic sauté creates a tasty and nutritious dish. I often prepare it for a light lunch or an informal dinner. It is ideal to take advantage of green beans that you have in the freezer. Go ahead and try it, you will love it! In addition, it is a very complete and economical vegetarian option.

Ingredients (7 ingredients)

  • 2 tazas green beans
  • 4 piece eggs
  • 1 piece chopped onion
  • 1 clove chopped garlic
  • 1 pinch salt
  • 1 pinch pepper
  • 1 chorro oil

Cooking the green beans

Thermomix® Setting
8 min/212°F/Speed 1 100

Place 2 cups of green beans in the Thermomix bowl. Add water to cover the beans and a pinch of salt. Program 8 Min./100°C/Stufe 1. Once cooked, drain the green beans and reserve.

Preparation of the egg mixture

In a large bowl, beat 4 eggs with a pinch of salt and pepper to taste. Add the cooked green beans to the beaten eggs and mix well. Reserve.

Onion and garlic sauté

Thermomix® Setting
3 min/248°F/Speed 1 120

Chop 1 onion into quarters and 1 clove of garlic. Introduce the onion and garlic into the Thermomix bowl and program 3 Sek./Stufe 5. With the spatula, lower the remains from the walls of the bowl. Add 1 splash of oil and program 3 Min./120°C/Stufe 1.

Omelette cooking

Pour the egg and green bean mixture over the onion and garlic in a hot frying pan. Cook the omelette over medium-low heat for about 8-10 minutes or until the edges are golden and the top is almost cooked. If you cover the pan during this process, the cooking will be more uniform.

Turn the omelette over

Place a large plate on the pan and carefully turn the omelette over to cook on the other side. Slide the omelette back into the pan and cook for another 5-7 minutes or until completely cooked and golden brown on both sides.

Serve

Once cooked, remove the omelette from the pan and place it on a plate. Cut the omelette into portions and serve hot as a main course or side dish.
