Description

This apple and blackberry jelly with a hint of vanilla is a real treat! I make it every year in autumn when the blackberries are ripe. The combination of sweet apples and slightly tart blackberries is simply unbeatable. The jelly tastes delicious on fresh bread, rolls or croissants. It is also a great gift for friends and family. The preparation is super easy and can be done in no time with the Thermomix®. An absolute must for all jelly lovers!

Ingredients (6 ingredients)

  • Jars
  • 250 g Blackberries
  • 600 ml Apple juice
  • 250 g Apples
  • 1000 g Gelling sugar (1:1)
  • 0.5 tsp Vanilla flavoring

Preparation (6 steps)

Cook blackberries and apple juice

5 min/212°F/Speed 1 100

Sort and wash 250 g blackberries. Add 600 ml apple juice and the blackberries to the mixing bowl and cook for 5 min./100°C/speed 1.

Strain fruit juice

Hang a fine sieve over a large pot. Pour the blackberry mixture from the mixing bowl into the sieve and rub through with a spoon to obtain approximately 700 ml of fruit juice. Let the juice cool slightly.

Prepare apples

Peel, halve and core 2-3 apples (approx. 250 g). Cut the apples into cubes and weigh out 200 g of pulp.

Cook jelly

Thermomix® Setting
4 min/212°F/Speed 2 100

Put 200 g apple cubes, 1 kg gelling sugar (1:1) and the cooled apple and blackberry juice into the mixing bowl. Mix everything well and mix for 15 sec./speed 3. Then cook at a rolling boil for 4 min./100°C/speed 2, stirring constantly.

Add vanilla

Add ½ tsp vanilla flavoring and stir in for 5 sec./speed 2.

Fill jelly

Pour the jelly immediately into prepared clean twist-off jars and seal. Let the jars cool upside down.
