Description

This covered apple cake with juicy baked apples and a creamy cream topping is a true delight, especially in the cold season. I always make it when I have a lot of apples and want to bake something special. The combination of the shortcrust pastry, the aromatic apples and the vanilla cream is simply unbeatable. The cake is perfect for birthdays, Christmas or just for coffee. It can be prepared well in advance and tastes delicious even the next day. An absolute favorite recipe for the whole family!

Ingredients (14 ingredients)

  • 650 g Flour
  • 200 g Sugar
  • 125 g Sugar
  • 2 Stücke Eggs (Size M)
  • 1 Stücke Egg yolk (Size M)
  • 400 g cold Butter or margarine
  • 150 g Raisins
  • 4 tbsp Rum
  • 2 kg Apples
  • 1 piece Lemon (juice of)
  • 1 packet Pudding powder "vanilla flavor
  • 150 g Whipped cream
  • 600 g Whipped cream
  • 1 Pck. Vanilla sugar

Prepare dough

Thermomix® Setting

Place 650 g flour, 200 g sugar, 2 eggs and 400 g cold butter or margarine in pieces in the mixing bowl and knead for 2 min./kneading stage to form a smooth dough. Wrap the dough in plastic wrap and chill for about 30 minutes.

Prepare raisins and peel apples

Wash 150 g raisins, dry them and mix in a bowl with 4 tbsp rum. Peel, halve and core 2 kg apples. Sprinkle the apple halves with the juice of 1 lemon to prevent them from browning.

Roll out dough and fill apples

Roll out half of the dough on a lightly floured work surface and place in a greased baking tray (35 x 40 cm). Press the dough up slightly at the edge. Fill the apple halves with the rum raisins and place them close together on the dough with the cut side down.

Prepare cream topping

Thermomix® Setting

Mix 1 packet of pudding powder "vanilla flavor" and 150 g whipped cream in a bowl until smooth. Put 600 g whipped cream, 1 pack. vanilla sugar and 125 g sugar into the mixing bowl and boil for 5 min./90°C/speed 2. Add pudding mixture and stir in for another 1 min./90°C/speed 2. Pour the cream topping evenly over the apples.

Place dough lid on top

Roll out the remaining dough into a rectangle (35 x 40 cm). Place the dough on the apples and press the edges of the dough firmly.

Brush and bake the cake

Bake the cake in a preheated oven (electric oven: 200 °C/ convection oven: 175 °C / gas: level 3) for 60 minutes. Whisk 1 egg yolk and brush the cake with it about 15 minutes before the end of the baking time. Bake the cake for another 15 minutes until golden brown.

The scent of cinnamon and apples wafting through the house is unforgettable. I have refined her recipe over the years, but the basic idea has remained the same: a simple, honest cake that makes you happy. The ingredients play a crucial role. The flour forms the basis for the shortcrust pastry, which becomes nice and crumbly thanks to the cold butter or margarine. The sugar provides the sweetness, while the eggs and egg yolk hold the dough together and give it a beautiful color. The raisins, soaked in rum, give the cake a special touch and a slight acidity. The apples, preferably a tart variety such as Boskop or Elstar, are the heart of the cake. The lemon juice prevents them from turning brown and enhances their flavor. The vanilla pudding powder binds the cream topping and gives it a fine vanilla flavor. The whipped cream makes the topping creamy and full-bodied. When preparing it in the Thermomix®, it is important that the butter or margarine is really cold so that the dough does not get too warm. After kneading, the dough should definitely be chilled so that it is easier to roll out. The apples should be placed close together on the dough so that the cake becomes nice and juicy. When making the cream topping, it is important that the cream does not boil for too long, as it can otherwise curdle. If you want to prepare the cake vegetarian, you can simply make sure that the margarine used does not contain any animal fats. For a vegan version, you can replace the butter with vegan margarine and the eggs with applesauce or flaxseed egg. Instead of rum, you can also use apple juice or cider. If you like, you can also refine the cake with cinnamon, cloves or cardamom. The covered apple cake tastes best lukewarm, plain or with a scoop of vanilla ice cream or a dollop of whipped cream. It goes perfectly with a cup of coffee or tea. The cake can be prepared well in advance. The dough can be prepared the day before and stored in the refrigerator. The apples can also be peeled and sprinkled with lemon juice in advance. The finished cake can be kept in the refrigerator for several days. It can also be frozen.
