Description

“Mandarin Paradise Cake” relies on eggs, sugar, flour, baking powder, mandarins for a harmonious flavor. The dish is ready to serve in about 120 minutes. The quantity is enough for approx. 12 portions, ideal for sharing. It is flexibly suitable for various nutritional styles. Thermomix® steps ensure precise textures and reproducible results. Tip: Round off the finish with fresh herbs or lemon.

Ingredients (12 ingredients)

  • 4 Stück Eggs
  • 150 g Sugar
  • 150 g Flour
  • 1 TL Baking powder
  • 2 Dose Mandarins
  • 1 Packung Pudding powder vanilla
  • 2 EL Sugar
  • 500 ml Cream
  • 1 Packung Cream stiffener
  • 1 Päckchen Vanilla sugar
  • 50 g Chocolate sprinkles
  • 1 Prise Salt

Preparation (13 steps)

Prepare sponge base

Preheat oven to 175°C top/bottom heat.

Whisk eggs and sugar until fluffy

Put eggs and sugar in the mixing bowl and whisk with the butterfly 4 min./speed 3.

Mix flour and baking powder and fold in

Mix flour and baking powder, add to the mixing bowl and fold in 20 sec./speed 2. Remove butterfly.

Bake dough

Fill dough into a springform pan (26 cm diameter) and bake in the preheated oven for approx. 20 minutes. Do the chopstick test.

Let the sponge base cool

Remove sponge base from the mold and let cool on a cake rack.

Pour off and collect mandarin juice

Drain mandarins in a sieve, collecting the juice. Measure out 250 ml of juice.

Cook pudding

Mix pudding powder, sugar and 6 tbsp mandarin juice. Add remaining mandarin juice to the mixing bowl and bring to boil 5 min./100°C/speed 2.

Finish pudding

Add stirred pudding powder and stir in 10 sec./speed 3.

Fold in mandarin slices

Fold mandarins into the pudding and let cool slightly.

Whip cream

Thermomix® Setting
2-3 min/Speed 3,5

Add cream, cream stiffener and vanilla sugar to the mixing bowl and whip with the butterfly 2-3 min./speed 3.5 until stiff. Keep visual contact!

Layer the cake

Enclose the sponge base with a cake ring. Spread mandarin pudding on the base. Spread cream on the pudding.

Sprinkle chocolate sprinkles

Spread chocolate sprinkles on the cream.

Cool the cake

Refrigerate cake for at least 2 hours, preferably overnight.
