Description

This Andalusian gazpacho is an explosion of fresh and summery flavor. Prepared in the Thermomix®, it is incredibly quick and easy to make. The combination of ripe pear tomatoes, crunchy cucumber and vibrant green pepper creates a cold soup perfect for hot days. A splash of extra virgin olive oil and a touch of vinegar enhance the natural flavors of the vegetables. Traditionally served with cucumber, pepper and Serrano ham croutons, although you can also add tuna or hard-boiled egg for a more complete version. Ideal as a light starter or a refreshing lunch!

Ingredients (9 ingredients)

  • Vinegar
  • Pepper
  • 8 piece pear tomatoes
  • 1 piece cucumber
  • 1 piece green pepper
  • Ham
  • Oil
  • Salt
  • Breadcrumb

Preparation (4 steps)

Vegetables for croutons

Reserve a piece of cucumber and green pepper for the croutons. Cut into small dice and reserve.

Crush the vegetables

Thermomix® Setting
30 sec/Speed 5

Add 8 chopped pear tomatoes, the rest of the chopped cucumber and the rest of the chopped green pepper to the Thermomix glass. Crush for 30 seconds/Stufe 5.

Add ingredients and crush

Thermomix® Setting
1 min/Speed 10

Add 4 tablespoons of oil, 2 tablespoons of vinegar, a pinch of salt, pepper to taste and breadcrumbs to taste to the Thermomix glass. Crush for 1 minute/Stufe 10 until a fine cream is obtained.

Serve

Serve the gazpacho cold. Add the reserved cucumber and pepper croutons and chopped ham to taste. Optionally, add tuna or chopped hard-boiled egg.
