Description

This Andalusian gazpacho is an explosion of fresh and summery flavor. Prepared in the Thermomix®, it is incredibly easy and quick to make. The combination of ripe tomatoes, green pepper, cucumber, onion and a touch of garlic creates a cold soup perfect for hot days. I always add some ice cubes to make it nice and cool. If you like it thicker, you can add a little bread from the day before. It's a vegetarian, vegan and super healthy dish that you'll love!

Ingredients (10 ingredients)

  • 1000 g ripe red tomatoes
  • 2 clove garlic
  • 50 g green pepper
  • 40 g onion
  • 70 g partially peeled cucumber
  • 30 g vinegar
  • 1 cucharadita salt
  • 100 g olive oil
  • 8 cubito ice
  • 200 g cold water

Preparation (4 steps)

Crush and beat the vegetables

Thermomix® Setting
30 Seg./Vel. 5, 3 min/Vel. 10

Place the ripe red tomatoes, garlic cloves, green pepper, onion, partially peeled cucumber, vinegar, salt, olive oil and ice cubes in the Thermomix bowl. Crush for 30 sec./speed 5. Then, beat for 3 min./speed 10.

Strain and adjust the consistency

Optionally, you can strain the gazpacho through the basket. If you want a more liquid consistency, add cold water with ice. If you prefer a thicker gazpacho, add 150 g of white bread from the day before in step 1.

Serve and decorate

Serve the gazpacho with the same vegetables it contains, cut into small cubes, and with bread also cut into cubes.

If you prefer the gazpacho without emulsifying, do not add the olive oil in step 1. Add it before straining the gazpacho and mix for 2 sec./speed 7.
