Description

This Andalusian gazpacho is an explosion of fresh and summery flavor. I prepare it with ripe tomatoes, peppers, cucumber and onion, all crushed in the Thermomix® for a smooth and delicious texture. A splash of extra virgin olive oil and Jerez vinegar give it the perfect final touch. It is ideal for hot days, as a starter or even as a light meal. Also, it is a very quick and easy recipe to make, perfect for when you don't have much time. Refreshing and nutritious!

Ingredients (8 ingredients)

  • 1.2 kg Ripe tomatoes
  • 1 piece Onion
  • 0.5 piece Dutch cucumber
  • 0.5 piece Green pepper
  • 0.5 piece Red pepper
  • 4 tbsp Extra virgin olive oil
  • 0.25 tsp Jerez vinegar
  • 1 tsp Salt

Preparation (3 steps)

Crush the vegetables

Wash all the vegetables. Introduce into the Thermomix glass 1.2 kg of ripe tomatoes in quarters, 1 onion in quarters, 1/2 Dutch cucumber cut into pieces, 1/2 green pepper cut into pieces without seeds, 1/2 red pepper cut into pieces without seeds, 4 tablespoons of extra virgin olive oil, 1/4 teaspoon of Jerez vinegar and 1 teaspoon of salt. Crush for 30 seconds at speed 5.

Crush until a fine cream is obtained

3 min/keine/Speed 10

Crush the mixture for 3 minutes at speed 10 to obtain a fine and homogeneous cream.

Cool and serve

Pour the gazpacho into a container and reserve in the refrigerator for at least 3 hours before serving so that it is very cold.
