Ingredients (12 ingredients)

  • 250 g breadcrumbs
  • 4 cucharadas extra virgin olive oil
  • 2 piece tomatoes
  • 1 piece medium onion
  • 1 piece Italian green pepper
  • 1 piece medium cucumber
  • 2 piece eggs
  • 3 clove garlic
  • fresh basil
  • White wine vinegar
  • 700 ml cold water
  • to taste Salt

Preparation (5 steps)

Vegetable preparation

Wash and cut into large pieces 2 tomatoes, 1 medium onion, 1 Italian green pepper and 1 peeled medium cucumber. Place all the vegetables in the Thermomix bowl.

Shred the vegetables

Shred the vegetables for 5 seconds at speed 5. Lower the remains of the walls of the glass with the spatula.

Add bread and oil

Add to the bowl 250 g of breadcrumbs soaked in 4 tablespoons of extra virgin olive oil, 3 cloves of garlic and a few fresh basil leaves. Shred for 15 seconds at speed 7.

Add water and vinegar

30 Seg./keine/Speed 10

Add 700 ml of cold water, a generous splash of white wine vinegar and salt to taste. Shred for 30 seconds at speed 10.

Cool and serve

Pour the gazpacho into a jug or container and refrigerate for at least 30 minutes. Meanwhile, cook 2 eggs, peel and chop them. Serve the cold gazpacho with the chopped eggs on top.
