Description

These stuffed aubergines are a delicious and nutritious Mediterranean dish, perfect for a family meal or a special brunch. The combination of fresh spinach, tuna and a touch of grated cheese creates a balanced and comforting flavor. Ingredients (12 ingredients)

  • 2 piece Aubergine
  • 500 ml Water
  • Salt
  • 2 clove Garlic
  • 150 g Onion
  • 50 g Extra virgin olive oil
  • 300 g Fresh spinach (leaves)
  • to taste Ground black pepper
  • 2 piece Eggs
  • 1 tsp Cornstarch
  • 140 g Tuna in drained oil
  • 50 g Grated cheese

Preparation (10 steps)

Preparation of the aubergines

Wash and cut the aubergines in half lengthwise. Carefully, empty the aubergines without breaking the skin and reserve the pulp.

Steaming the aubergines

Thermomix® Setting
20 min/Varoma/Vel. 1 Varoma

Pour 500 ml of water into the Thermomix bowl. Place the Varoma container in its position. Place the aubergine halves in the Varoma, sprinkled with salt and with the skin facing up. Cover and program 20 min/Varoma/speed 1.

Emptying the bowl

Remove the Varoma with the aubergines and empty the Thermomix bowl.

Preparation of the sofrito

Thermomix® Setting

Put the garlic, chopped onion, aubergine pulp and olive oil in the bowl. Chop 3 sec/speed 5.

Vegetable sofrito

Thermomix® Setting
6 min/Varoma/Vel. 1 Varoma

Sauté the previous mixture for 6 min/Varoma/speed 1.

Add the spinach

Thermomix® Setting
3 min/Varoma/Giro inverso Vel. 1 Varoma Reverse

Add the fresh spinach to the bowl. Program 3 min/Varoma/reverse rotation and speed 1, introducing the spatula through the opening and moving it from side to side so that the spinach is evenly sautéed.

Incorporate the rest of the ingredients

Thermomix® Setting
10 Seg./Giro inverso Vel. 3 Reverse

Add salt, pepper, eggs, cornstarch and drained tuna to the bowl. Mix 10 sec/reverse rotation and speed 3.

Fill the aubergines

Place the aubergines with the skin facing down in an ovenproof dish and fill them with the spinach and tuna mixture.

Gratin the aubergines

Sprinkle the stuffed aubergines with the grated cheese and bake for 10-15 minutes in a preheated oven at 220º with grill.

Serve

Remove from the oven and serve the stuffed aubergines hot.
