Description

These gourmet sandwiches with salmon and courgettes are perfect for a Sunday brunch or a delicious aperitif. The combination of smoked salmon with the creaminess of gorgonzola and the freshness of grilled courgettes is simply delicious. Ingredients (6 ingredients)

  • 8 slice Sandwich bread
  • 200 g Smoked salmon
  • 150 g Gorgonzola
  • 1 piece Courgette
  • 2 tbsp Extra virgin olive oil (EVO)
  • 1 pinch Salt

Preparation (6 steps)

Sliced courgettes

Wash and cut the courgettes into thin slices. Put the courgette slices in the Varoma.

Steaming the courgettes

Thermomix® Setting

Pour 500 ml of water into the bowl, place the Varoma with the courgettes and cook for 10 Min./Varoma/Stufe 1.

Preparation of the sandwiches

Spread the gorgonzola on the slices of sandwich bread. Arrange the smoked salmon on half of the slices.

Assembling the sandwiches

Add the steamed courgette slices on top of the salmon and cover with the remaining slices of sandwich bread.

Toasting the sandwiches

Heat a griddle or toaster. Toast the sandwiches for about 5 minutes per side, until golden brown.

Serve

Cut the sandwiches into triangles and serve hot.

Gorgonzola, with its enveloping creaminess and its strong and slightly spicy taste, creates a perfect contrast with the delicacy of salmon. The courgette, steamed to preserve its freshness and crispness, adds a vegetable note that balances the more intense flavours. Extra virgin olive oil, a golden thread that binds all the ingredients, gives a touch of elegance and Mediterranean fragrance. Preparation with the Thermomix® is incredibly simple and fast. While the food processor is busy steaming the courgettes, we can dedicate ourselves to preparing the other ingredients. A tip: for an optimal result, cut the courgettes into thin slices and arrange them evenly in the Varoma. In this way, they will cook evenly and maintain their crunchy consistency. As for the gorgonzola, choose a good quality one, creamy and not too seasoned. If you prefer a more delicate flavour, you can replace it with ricotta or spreadable cheese. The variations are endless. For a vegetarian version, you can replace the salmon with sliced avocado, sun-dried tomatoes in oil or grilled aubergines. For an extra touch of flavour, you can add a pinch of freshly ground black pepper or a few basil leaves. If you love spicy flavours, you can add a pinch of chilli powder. For a vegan version, replace the gorgonzola with a vegan spreadable cheese and the salmon with grilled artichokes or sautéed mushrooms. Serve the sandwiches hot, cut into triangles, accompanied by a fresh salad or a side of grilled vegetables. They are perfect for a Sunday brunch, a delicious aperitif or a quick and tasty lunch. You can also prepare them in advance and store them in the refrigerator, wrapped in cling film, until ready to serve.
