These salmon savory muffins with cheese cream are perfect for a Sunday brunch or as a delicious appetizer. The combination of smoked salmon with cheese cream is simply delicious! Preparing them is really quick and easy with the Thermomix®. I love them because they are soft and tasty, and the cheese cream makes them even more irresistible. An original idea for a buffet or a party, which will conquer all your guests. Try them, you won't regret it!

  • 3 uova eggs
  • 150 ml milk
  • 100 ml seed oil
  • 40 g grated cheese
  • 250 g flour
  • 0.5 packet instant yeast for savory cakes
  • 200 g smoked salmon

Baking in the oven

Divide the mixture into the muffin tins inside the 12 muffin mold. Bake in a preheated static oven at 180 °C for 20 – 25 minutes, or in a fan oven at 170 °C for the same time.

Remove from the oven and let the muffins cool completely.

Put the cream in the pastry bag with the nozzle we prefer (we used the star one) and decorate each muffin. Finally, garnish the surface with a rolled piece of salmon, a little chives and sprigs of thyme.

I remember that the first time I tasted them, during a trip to Scandinavia, they were much more rustic and less refined. I therefore wanted to create a more elegant version, suitable for an aperitif or a special brunch. The key to the success of these muffins lies in the balance of flavors and textures. The smoked salmon, with its smoked and salty note, goes perfectly with the delicacy of the cheese cream. The eggs, milk and seed oil give the dough the right humidity and softness, while the grated cheese adds an extra touch of flavor. The flour and instant yeast for savory cakes are essential for the leavening and structure of the muffin. The chives, both in the dough and in the cream, give a fresh and herbaceous aroma that enhances the other ingredients. When preparing the dough with the Thermomix®, it is important not to work the ingredients too much, especially after adding the flour. This is to prevent the muffins from becoming hard. The Linkslauf (reverse rotation) when adding the salmon and chives is essential to avoid chopping the salmon too much and keeping the pieces intact. For cooking, I recommend checking the browning of the muffins with a toothpick: if it comes out clean, they are ready. To vary the recipe, you can use other types of smoked fish, such as trout or mackerel. For a vegetarian version, you can replace the salmon with grilled vegetables, such as courgettes, aubergines or peppers. You can also add other aromatic herbs, such as parsley, dill or basil. The muffins can be stored in an airtight container at room temperature for a couple of days, or in the refrigerator for a week. They can also be frozen, but the texture may slightly change.
