Description

This almond orange bundt cake, prepared in the Thermomix®, is a juicy cake with almonds, orange and cinnamon. The recipe is vegan and vegetarian. In 40 minutes, a cake for 6 servings is created. Ideal for the winter coffee table, as a dessert or for breakfast.

Ingredients (11 ingredients)

  • 50 g Margarine
  • 1 Orange
  • 100 g Almonds ground
  • 100 g Flour
  • 75 g Sugar
  • 50 g Chopped almonds
  • 2 TL Baking powder
  • 1 TL Cinnamon
  • 1 Prise Salt
  • 100 ml Soy milk
  • 10 Tropfen Bitter almond flavor

Preparation (6 steps)

Prepare orange

Wash an orange with hot water and dry it. Grate the zest and set aside 1 tsp of orange zest. Squeeze the juice and measure out 50 ml.

Mix dry ingredients

Put 100 g ground almonds, 100 g flour, 75 g sugar, 50 g chopped almonds, 2 tsp baking powder, 1 tsp cinnamon and 1 pinch of salt into the mixing bowl and mix for 10 sec./speed 4.

Add and mix liquid ingredients

20 sec/Speed 3

Add 50 g margarine, 100 ml soy milk, 10 drops of bitter almond flavor and 50 ml of orange juice to the dry ingredients in the mixing bowl and stir for 20 sec./speed 3. Use the spatula to push down from the edge and stir for another 10 sec./speed 3.

Fill molds with dough

Pour the dough evenly into the prepared silicone molds.

Baking

Place the filled molds in the preheated oven and bake for approx. 20 minutes. Preheat the oven to 170 °C circulating air (190 °C top/bottom heat).

Cool and serve

Let the mini bundt cakes cool down in the mold, carefully remove them from the mold and decorate as desired or serve sprinkled with icing sugar.
