Description

A delicious vegan almond-orange bundt cake, perfect for Christmas or brunch.

Ingredients (11 ingredients)

  • 50 g Margarine
  • 1 Orange
  • 100 g Ground almonds
  • 100 g Flour
  • 75 g Sugar
  • 50 g Chopped almonds
  • 2 TL Baking powder
  • 1 TL Cinnamon
  • 1 Prise Salt
  • 100 ml Soy milk
  • 10 Tropfen Bitter almond flavouring

Preparation (6 steps)

Preheat oven and prepare molds

3 min/122°F/Speed 1 50

Preheat the oven to 170 °C convection (190 °C top/bottom heat). Grease a mini bundt cake pan with 6 molds (or silicone molds) with some margarine. Put 50 g margarine into the mixing bowl and melt for 3 Min./50°C/Stufe 1.

Prepare orange

Wash 1 orange with hot water and dry. Rub the peel with a zester and set aside. Halve the orange and squeeze out 50 ml of juice. Use the remaining juice for other purposes.

Mix dry ingredients

Put 100 g ground almonds, 100 g flour, 75 g sugar, 50 g chopped almonds, 2 tsp baking powder, 1 tsp cinnamon, 1 tsp orange zest and 1 pinch of salt into the mixing bowl and mix for 10 Sek./Stufe 3.

Add liquid ingredients and prepare dough

Add the melted margarine, 100 ml soy milk, 10 drops of bitter almond flavouring and 50 ml of orange juice to the dry ingredients in the mixing bowl and stir for 20 Sek./Stufe 3. Scrape down from the edge with the spatula and stir for another 10 Sek./Stufe 3.

Fill molds and bake

Pour the dough evenly into the prepared silicone molds. Bake the vegan mini bundt almond-orange in the preheated oven for about 20 minutes.

Cool and serve

Let the mini bundt cakes cool in the mold. Carefully remove from the mold and garnish as desired or serve sprinkled with icing sugar.
