I have been making these hearty meat patties in bread for a while now and they are always a hit! The recipe is perfect for a hearty brunch or as a savory snack in between. The mixed minced meat is processed with soaked bread rolls, eggs and spices into a juicy meat patty and fried in the pan. Then the patty is placed in a toasted flatbread and topped with lettuce, pickles and ketchup. An absolute favorite recipe that is quick to prepare and simply delicious!

Ingredients (13 ingredients)

  • 1 piece Flatbread
  • 1.2 kg Minced meat, mixed
  • 2 piece Bread rolls, stale
  • 2 piece Egg
  • 1 piece Onion, small
  • 4 Blätter Lettuce
  • 10 slice Ketchup
  • 2 piece Pickle
  • Oil
  • Salt
  • Pepper
  • Parsley, finely chopped
  • Paprika powder, hot

Preparation (6 steps)

Chop onion

Put a small onion in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Prepare minced meat

Put 1.2 kg of mixed minced meat, 2 stale bread rolls (previously soaked and squeezed out), 2 eggs, the chopped onion, parsley, paprika powder, salt and pepper in a bowl and mix well. Divide the mixture into two halves and form each into a large patty, approximately the size of the flatbread or the pan available. Then bread these with breadcrumbs.

Toast flatbread

Preheat the oven to 80°C top/bottom heat. Place the horizontally sliced flatbread in the oven to toast.

Fry meat patties

Fry a meat patty in a hot, generously greased pan. Then carefully turn it and let it cook through. After the first patty has been put in the oven to keep warm, prepare the second meat patty in the same way.

Top burger

Remove the flatbread from the oven and top the burger as follows: Spread some ketchup on the bottom of the bread. Place the first layer of meat on top, which is covered with half of the cheese. Then place the second layer of meat on top and garnish with the rest of the cheese. Top the burger with lettuce, onion rings and sliced pickles. Finally, place the ketchup-coated top of the flatbread on top.

Serve

Divide the burger into four pieces and serve.

These hearty meat patties in bread have been a hit with our family for several years. I originally got the recipe from a friend who in turn had it from her grandma. So it's a real family recipe with tradition that I've adapted a little bit over time. The secret, in my opinion, lies in the quality of the ingredients. The mixed minced meat should not be too lean, as the fat ensures the patties are juicy. The stale bread rolls, which are soaked in milk or water, serve as a binding agent and make the meat mixture nice and loose. The onion provides a pleasant spice, while parsley and paprika give the whole thing an aromatic note. Salt and pepper should of course not be missing to round off the taste. The preparation with the Thermomix® is very easy. First, the onion is chopped in the mixing bowl, which saves time and tears. Then all the ingredients for the meat mixture are mixed in a bowl. Here it is important to squeeze the bread rolls well so that the mixture does not become too moist. The meat mixture is then divided into two halves and formed into patties. I like to bread the patties with breadcrumbs to give them a crispy crust. While the patties are frying in the pan, you can toast the flatbread in the oven. Toasting ensures that the bread becomes nice and crispy and does not get soggy so quickly. There are no limits to your imagination when topping the burger. I like it classic with lettuce, pickles and ketchup, but you can also use other sauces, cheese or vegetables. If you like it vegetarian, you can replace the minced meat with a mixture of lentils, rice and vegetables. Instead of eggs, you can mix flaxseed flour with water to bind the mixture. For a vegan version, you can also use vegan cheese and mayonnaise. You can experiment with the spices and add garlic, chili or cumin, for example. French fries, potato salad or a fresh salad go well as a side dish. The finished meat patties in bread taste best when they are freshly prepared. But you can also prepare the meat patties and keep them in the refrigerator. Simply heat up in the pan or in the oven before serving. However, the flatbread should only be toasted shortly before serving so that it does not become too dry.
