Description

This hearty pasta salad with cooked sausage is a true classic and should not be missing at any party! I've been making it since I was a child and it's always a hit. The combination of the pasta, the spicy cooked sausage, the crunchy vegetables and the creamy sauce is simply unbeatable. I especially like the fresh parsley, which gives the salad a special touch. The salad can be prepared well in advance and tastes best when it has been refrigerated for a few hours. Ideal for a picnic or a relaxed lunch in the garden!

Ingredients (13 ingredients)

  • 500 g Pasta (e.g. spirals)
  • to taste Salt
  • 200 g Frozen peas
  • 200 g Cooked sausage
  • 1 can Corn (small, drained weight 140 g)
  • 6 piece Pickled gherkins (or cornichons)
  • 1 piece Red bell pepper
  • 250 g Mayonnaise
  • 1 tbsp Mustard
  • 3 tbsp Pickle juice
  • to taste Salt
  • to taste Pepper
  • Fresh parsley

Preparation (4 steps)

Cook Pasta

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 500 g pasta and salt to the mixing bowl. Cover with water and cook according to package instructions for 10 min./100°C/speed 1. During the last 2-3 minutes, add 200 g of frozen peas and cook with them. Drain the pasta and peas and let them cool in a bowl.

Prepare cooked sausage, gherkins and bell pepper

Cut 200 g of cooked sausage, 6 small pickled gherkins and 1 red bell pepper into small cubes. Drain 1 can of corn. Add all ingredients to a large bowl with the cooled pasta and peas.

Prepare salad dressing

Thermomix® Setting
20 sec/Speed 3

Add 250 g mayonnaise, 1 tbsp mustard and 3-4 tbsp pickle juice to the mixing bowl and mix for 20 sec./speed 3. Season with salt and pepper.

Mix pasta salad

Add the salad dressing to the pasta and the remaining ingredients in the bowl and carefully fold in until all ingredients are evenly mixed. Let the pasta salad sit in the refrigerator for at least 1 hour before serving. Before serving, season again with salt and pepper if necessary and sprinkle with fresh chopped parsley as desired.
