Description

This savory galette with fresh mushrooms and a perfectly set egg is an absolute delight for any brunch or relaxed weekend breakfast. I love how the crispy shortcrust pastry harmonizes with the creamy filling. The preparation is very simple and the Thermomix® helps to optimally prepare the shallots and mushrooms. A touch of fresh parsley rounds off the dish perfectly. Vary the recipe as you like with other vegetables or cheese – there are no limits to your creativity! Tastes best warm.

Ingredients (7 ingredients)

  • 300 g Shortcrust pastry (refrigerated section)
  • 250 g Mushrooms
  • 1 piece Shallot
  • 1 tbsp Rapeseed oil
  • 100 g Salt and pepper
  • 4 piece Eggs
  • 15 g Fresh parsley

Preparation (8 steps)

Prepare shortcrust pastry

Unroll the shortcrust pastry and form it into a circle (approx. 25 cm diameter) on a piece of baking paper. Fold the edges inwards to create a thicker edge.

Preheat oven

Preheat the oven to 200 °C top/bottom heat.

Chop shallot

3 sec/Speed 5

Peel and quarter the shallot and place in the mixing bowl. Chop 3 sec./speed 5.

Sauté mushrooms and shallots

Thermomix® Setting
8 min/248°F/Speed 1 120

Add 1 tbsp rapeseed oil to the shallots in the mixing bowl and sauté 3 min./120°C/speed 1. Clean the mushrooms, slice and add. Sauté for another 5 min./120°C/speed 1. Season with salt and pepper.

Top galette

Spread the mushroom mixture on the prepared shortcrust pastry. Carefully crack the eggs into the galette, making sure that the egg does not run over the edge. Season with salt and pepper.

Bake galette

Bake the galette in the preheated oven for approx. 25 minutes until the dough is golden brown and the egg is set.

Chop parsley

Wash the parsley, shake dry and place in the mixing bowl. Chop 3 sec./speed 8.

Garnish galette

Sprinkle the finished galette with the chopped parsley and serve.
