Description

This creamy noodle casserole with tomatoes and mozzarella is an absolute comfort food! I really like to make it when things need to be quick and the whole family needs to be satisfied. The combination of the fruity tomato sauce, the al dente noodles and the melted mozzarella is simply unbeatable. I especially like it when fresh basil is stirred in. The casserole is vegetarian and can be prepared very well. Perfect for a cozy evening or as lunch for the whole week!

Ingredients (14 ingredients)

  • 1 piece Onion
  • 2 clove Garlic
  • 1 piece Chili pepper, fresh
  • 400 g Cherry tomatoes
  • 50 g Parmesan
  • 125 g Mozzarella
  • 1 bunch Basil
  • 400 g Rigatoni or Penne
  • Olive oil
  • 500 g Tomatoes, strained
  • 200 ml Cream
  • Salt
  • Pepper, black
  • Sugar

Preparation (6 steps)

Chop onion, garlic and chili

Peel the onion and garlic and cut into rough pieces. Deseed the chili pepper and chop roughly as well. Put everything together in the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push everything down from the edge.

Sauté vegetables

Put some olive oil in the mixing bowl and sauté the chopped onions, garlic and chili for 3 min./120°C/speed 1.

Prepare tomato sauce

Thermomix® Setting
10 min/212°F/Speed 1 100

Add the strained tomatoes, halved cherry tomatoes, salt, pepper and sugar to the mixing bowl and simmer for 10 min./100°C/speed 1.

Grate Parmesan and refine sauce

Put the Parmesan in pieces in the mixing bowl and grate for 10 sec./speed 8. Then add the cream and stir in for 2 min./90°C/speed 2.

Add noodles and mozzarella

1 min/Linkslauf/Speed 1 Reverse

Add the cooked noodles, half of the diced mozzarella and half of the sliced basil to the mixing bowl and mix in for 1 min./reverse/speed 1.

Gratin casserole

Pour the noodle mixture into a casserole dish, sprinkle with the remaining mozzarella and bake in a preheated oven at 200°C top/bottom heat for approx. 20 minutes until golden brown.
