Description

This savory onion cake is an absolute classic and tastes simply delicious! I especially like to make it in the autumn when the onions are fresh from the field. The dough is nice and fluffy and the topping of onions, bacon and a creamy custard is simply irresistible. It is always well received by me, whether for brunch, as a snack or as a main course. It can also be prepared well in advance and tastes good both warm and cold. A great recipe for those who like it hearty!

Ingredients (16 ingredients)

  • 250 g Flour
  • 1 tsp Sugar
  • 0.5 tsp Salt
  • 175 ml Milk
  • 15 g Yeast
  • 25 g soft Butter
  • 1000 g Onions
  • 250 g smoked, streaky Bacon
  • 2 tbsp Oil
  • 125 g Sour cream
  • 100 g Cream
  • 3 piece Eggs (size M)
  • to taste Pepper
  • to taste grated Nutmeg
  • 2 tbsp Breadcrumbs
  • to taste Flour for work surface and hands

Preparation (6 steps)

Prepare dough

Thermomix® Setting
2 min/99°F/Speed 2 37

Add flour, sugar and salt to the mixing bowl and mix for 10 sec/speed 3. Add milk and yeast to the mixing bowl and heat for 2 min/37°C/speed 2. Add butter and knead for 2 min/knead setting to form a smooth dough. Transfer the dough to a bowl and let it rise covered in a warm place for about 40 minutes.

Prepare onions

Thermomix® Setting
5 sec/Speed 5

Peel and halve the onions and place them in the mixing bowl. Chop for 5 sec/speed 5. Cut bacon into cubes.

Sauté onions

Thermomix® Setting
15 min/248°F/Speed 1 120

Add oil and diced bacon to the mixing bowl and sauté for 3 min/120°C/speed 1. Add onions and sauté for 15 min/120°C/speed 1. Then transfer to a bowl and let cool.

Roll out and shape dough

Knead the dough well on a floured work surface with floured hands. Roll out on a floured work surface into a circle (approx. 32 cm Ø). Grease a springform pan (26 cm Ø) and dust with flour. Place the dough in it, pressing the edge lightly. Let rise again in a warm place for about 30 minutes.

Prepare custard

Put sour cream, cream and eggs into the mixing bowl. Season with salt, pepper and nutmeg and stir for 20 sec/speed 3.

Top and bake onion cake

Sprinkle the bottom with breadcrumbs. Spread the onions on top and pour the egg custard over it. Bake in a preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) on the lower rack for 50–60 minutes. Remove from the oven and let rest on a wire rack for about 10 minutes. Remove from the springform pan, cut into pieces and serve.
