Add 30 g butter to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add and sauté vegetables

Add 1 kg Hokkaido pumpkin (divided, seeds removed, coarsely grated), 4 medium-sized potatoes (peeled and diced) and 2 carrots (peeled and diced) to the mixing bowl and sauté for 5 min./120°C/speed 1.

Cook soup

Add 1.25 liters of water to the mixing bowl and cook for 20 min./100°C/speed 1.

Puree soup

Puree the soup for 30 sec./speed 8-10. Hold the lid firmly in place.

Refine soup

Add 100 ml cream, salt, pepper and nutmeg to taste in the mixing bowl and stir in for 2 min./90°C/gentle stir setting.

Sprinkle 2 tbsp of chopped parsley over the soup and serve.
