Description
This sponge cake roll, prepared in the Thermomix®, is a classic dessert for coffee parties. The main ingredients are eggs, sugar, flour and a little rum for the aroma. The preparation is particularly easy with the WunderSlicer V2 from Wundermix. The baking time is about 40 minutes and yields one sponge cake roll. Ideal for anyone looking for a simple and delicious cake classic.

Preparation (5 steps)
Whisk eggs and sugar
Put 5 eggs and 5 tbsp water into the mixing bowl and whisk for 5 min./speed 4 with the Thermomix.
Add sugar and continue whisking
Add 15 g caster sugar and 1/4 vanilla sugar to the mixing bowl and whisk for 3 min./speed 4 with the Thermomix.
Add 5 egg yolks, rum and lemon zest
Add 5 egg yolks, rum and lemon zest to the mixing bowl and briefly fold in using the pulse setting.
Mix flour and baking powder
Add 15 g flour and 1/2 baking powder to the mixing bowl and mix for 15 sec./speed 3.
Bake
Place the dough on a baking sheet and bake at 180°C top/bottom heat for 20 minutes.
