Description

This dish with wild boar liver is a real treat and is on the table in no time! I especially like to make it in autumn, when the game season begins. The liver is briefly fried and then served in an aromatic balsamic red wine sauce with caramelized onions. The dish is not only incredibly delicious, but also relatively easy to prepare. Potatoes or Spätzle go perfectly with it. A hearty dish for lovers of game specialties!

Ingredients (12 ingredients)

  • 0.5 Stück Liver from wild boar, fresh
  • 5 EL Flour for turning
  • Clarified butter or vegetable fat
  • 3 Stück small Onions
  • 2 Stück Garlic cloves
  • 1.5 EL Honey
  • 50 ml Aceto balsamico
  • 100 ml Red wine
  • 100 ml Game stock or vegetable broth
  • 0.5 EL Flour for thickening
  • Salt
  • Pepper

Preparation (6 steps)

Prepare onions and garlic

Peel and halve the onions. Peel the garlic cloves. Place both in the mixing bowl and chop for 3 sec./speed 5. Use the spatula to push everything down from the edge.

Sauté onions and garlic

Add clarified butter or vegetable fat to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add honey to the onions and garlic in the mixing bowl and let it caramelize for 2 min./120°C/speed 1.

Deglaze and simmer sauce

Add aceto balsamico, red wine and game stock or vegetable broth to the mixing bowl and simmer for 2 min./100°C/speed 1.

Thicken sauce

Stir the flour for thickening with a little water until smooth. Add the stirred mixture to the mixing bowl and simmer for 1 min./100°C/speed 2.
