Description

These baked seafood empanadas are a true feast for the palate. The dough, made at home, is crispy and golden, while the filling, with a mixture of fresh seafood, onion and spices, is juicy and full of flavor. Ingredients (10 ingredients)

  • 1 piece diced onion
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 350 gramos assorted seafood of your preference
  • 600 gramos flour
  • 1 tsp salt
  • 120 gramos melted lard
  • 40 mililitros white wine
  • warm water
  • 1 piece beaten egg for brushing

Dough preparation

Place 600 grams of flour and 1 teaspoon of salt in the Thermomix bowl. Mix 5 Sec./Stufe 4. Add 120 grams of melted lard and 40 milliliters of white wine. Mix 10 Sec./Stufe 4. With the Thermomix running at Stufe 4, add warm water little by little until you obtain a manageable dough that does not stick to your hands. Knead 2 Min./Knetstufe. Remove the dough from the bowl, form a ball and let it rest in a warm place for at least 30 minutes.

Roll out and cut the dough

Sprinkle a surface with flour. Roll out the dough with a rolling pin until it is approximately 0.5 centimeters thick. Cut out discs of about 15 centimeters in diameter with a cookie cutter or a plate.

Filling preparation: Crushing the onion

Place 1 diced onion in the Thermomix bowl. Crush 3 Sek./Stufe 5.

Sauté the onion

Thermomix® Setting

Add a little oil to the Thermomix bowl. Program 5 Min./120°C/Stufe 1 to sauté the onion.

Add the seafood and spices

Thermomix® Setting
10 min/194°F/Linkslauf Speed 1 90 Reverse

Add 1 teaspoon of paprika, 1 teaspoon of garlic powder and 350 grams of assorted seafood to the Thermomix bowl. Cook 10 Min./90°C/Linkslauf Stufe 1 or until the seafood is cooked.

Fill and seal the empanadas

Take a disc of dough and place a portion of the filling in the center. Fold the dough over itself to form an empanada. Seal the edges by wetting them with water and pressing with a fork.

Brush and bake

Beat 1 egg and brush the surface of the empanadas. Preheat the oven to 180°C. Place the empanadas on a baking tray covered with baking paper. Bake for 25 minutes or until golden brown. Optionally, turn on the grill for the last 5 minutes for a more even browning.
