Description

This vegetarian mushroom stroganoff with herb potatoes, prepared in the Thermomix®, is a hearty main course with button mushrooms, shiitake (or wild mushrooms) and potatoes. Preparation takes about 45 minutes and yields 4 servings. Ideal for lovers of hearty cuisine and as a filling family meal. With the Thermomix®, the preparation is quick and easy.

Ingredients (16 ingredients)

  • 500 g Water
  • 1 TL Salt
  • 0.5 TL Pepper
  • 750 g Potatoes, waxy, in bite-sized pieces
  • 300 g Button mushrooms, halved or quartered
  • 250 g Shiitake mushrooms, halved, or wild mushrooms, mixed, halved
  • Oil for frying
  • 200 g Pickled gherkins, in pieces
  • 30 g Parsley, picked
  • 100 g Onions, halved
  • 1 Stück Garlic clove
  • 50 g Oil
  • 50 g Tomato paste
  • 250 g Water
  • 1 TL Spice paste for vegetable stock, homemade, or 1 cube of vegetable stock (for 0.5 l)
  • 100 g Sour cream

Cook potatoes

Add 500 g water and 1 tsp salt to the mixing bowl. Insert the steamer basket, weigh in 750 g potatoes, waxy, in bite-sized pieces and cook for 25 min./Varoma/speed 1.

Fry button mushrooms and shiitake

During this time, fry 300 g button mushrooms, halved or quartered, and 250 g shiitake mushrooms, halved, or wild mushrooms, mixed, halved in oil in a pan on the stove and season with 1 tsp salt and 1/2 tsp pepper.

Remove potatoes

Remove the steamer basket using the spatula, transfer the potatoes and empty the mixing bowl.

Chop pickled gherkins

Put 200 g pickled gherkins, in pieces into the mixing bowl, chop for 2 sec./speed 5 and transfer.

Chop parsley

Put 30 g parsley, picked into the mixing bowl, chop for 2 sec./speed 6 and transfer.

Chop onions and garlic

Put 100 g onions, halved and 1 garlic clove in the mixing bowl, chop for 3 sec./speed 5 and push down with the spatula.

Sauté onions and garlic

Add 50 g oil and 50 g tomato paste and sauté for 4 min./120°C/speed 2.

Cook mushrooms and spices

Add fried mushrooms, 250 g water, 1 heaped tsp spice paste for vegetable stock, homemade, or 1 cube of vegetable stock (for 0.5 l), salt and pepper and cook for 10 min./100°C/speed 1.

Fry potatoes

During this time, fry the cooked potatoes in a pan on the stove and garnish with half of the chopped parsley.

Finish Stroganoff

Add chopped cucumbers and 100 g sour cream to the mixing bowl and heat for 4 min./98°C/speed 1.
