Description

These Jamaican chicken thighs are an explosion of flavors! The marinade with jerk spices, sriracha and honey makes them incredibly tasty and slightly spicy. I often prepare them for summer barbecues or for an informal dinner with friends. The meat remains tender and juicy, and the aroma that is released during cooking is simply irresistible. A tip? Prepare an extra dose, because they will disappear in the blink of an eye! Perfect to accompany with basmati rice or baked potatoes. The marinating takes a bit of time, but the end result is absolutely worth it.

  • Chicken thighs
  • Jamaican jerk for meat
  • Red Sriracha
  • Honey
  • Salt

Preparation (7 steps)

Cleaning the chicken thighs

Thoroughly clean the chicken thighs and singe them to remove any residual feathers. This step is important to ensure an optimal result.

Preparation of the marinade

In a bowl, mix the Jamaican jerk for meat, the red sriracha and the honey. The quantity of sriracha can be adjusted according to your taste for spiciness.

Marinating the chicken thighs

Arrange the chicken thighs in a baking dish and pour the prepared marinade. Massage the thighs well to ensure they are completely covered by the marinade. Cover with transparent film and leave to marinate in the refrigerator for at least 2 hours, ideally even longer.

Preheating the oven

Preheat the oven to 180°C.

Baking in the oven

Transfer the marinated chicken thighs to a grill placed inside a baking tray. Bake in a preheated oven at 180°C for about 30 minutes, or until the thighs are cooked through and golden brown.

Preparation of the final sauce

Transfer the cooked chicken thighs to a bowl. Add more sriracha (or your favorite hot sauce) and honey. Mix well to coat the thighs evenly.

Final caramelization

Put the chicken thighs back on the grill and bake for another 5 minutes to caramelize them slightly.
