Description

The Brussels sprouts-mushroom-pan with mashed potatoes is a hearty, vegetarian main course that is easily prepared with the Thermomix®. The main ingredients are Brussels sprouts, button mushrooms, shallots and potatoes, refined with goat cream cheese and lemon. The dish is ideal for the autumn and winter season and is suitable as a seasonal family meal. The preparation time is approx. 45 minutes for 4 servings.

  • 600 g Brussels sprouts
  • 600 g Button mushrooms
  • 4 Stück Shallots
  • 1000 g Potatoes
  • nach Geschmack Salt
  • 6 EL Oil
  • 4 EL Goat cream cheese
  • 1 Stück Organic lemon
  • nach Geschmack Pepper
  • 200 ml Fresh whole milk
  • 3 EL Butter
  • nach Geschmack Grated nutmeg
  • 6 Halm Chives

Preparation (12 steps)

Prepare Brussels sprouts

Clean and wash 600 g Brussels sprouts and score the stem bases crosswise. Then set aside.

Prepare button mushrooms

Clean, trim and quarter 600 g button mushrooms. Then set aside.

Chop shallots

3 sec/Speed 5

Peel and halve 4 shallots and put them in the mixing bowl. Chop for 3 sec./speed 5. Scrape down with the spatula.

Sauté shallots

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 3 tbsp oil to the shallots in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add and sauté mushrooms

Thermomix® Setting
5 min/248°F/Linkslauf Speed 1 120 Reverse

Add half of the prepared button mushrooms to the mixing bowl and sauté for 5 min./120°C/reverse/speed 1. Then remove and keep warm.

Sauté remaining mushrooms

Thermomix® Setting
5 min/248°F/Linkslauf Speed 1 120 Reverse

Add the remaining button mushrooms to the mixing bowl and sauté for 5 min./120°C/reverse/speed 1. Then remove and keep warm with the other mushrooms.

Add Brussels sprouts

3 min/212°F/Linkslauf Speed 1 100 Reverse

Add the prepared Brussels sprouts to the mushrooms in the mixing bowl. Add 4 tbsp goat cream cheese, the juice and zest of 1 organic lemon, salt and pepper and heat for 3 min./100°C/reverse/speed 1. Then keep warm.

Prepare potatoes

Peel, wash and halve 1 kg potatoes. Place in the steamer basket.

Steam potatoes

Thermomix® Setting
20 min/Varoma/Speed 1 Varoma

Pour 500 ml water into the mixing bowl, insert the steamer basket with the potatoes and steam for 20 min./Varoma/speed 1.

Prepare mashed potatoes

Thermomix® Setting
20 sec/Speed 4

After the steaming time, remove the steamer basket and empty the water from the mixing bowl. Put the cooked potatoes back into the mixing bowl. Add 200 ml fresh whole milk, 3 tbsp butter, salt, pepper and grated nutmeg and process into a puree for 20 sec./speed 4. If necessary, help with the spatula.

Prepare chives

Wash 6 sprigs of chives, shake dry and cut into fine rolls.

Arrange

Sprinkle the mashed potatoes with chives and serve together with the Brussels sprouts-mushroom-pan.
