Description

This rustic chicken with baked potatoes is a simple and comforting dish, perfect for a family dinner. The recipe, of peasant origin, enhances the genuine flavors of fresh ingredients. The chicken, browned and then baked with potatoes and onions, becomes tender and juicy, while the potatoes absorb all the aromas and juices of the meat. A drizzle of extra virgin olive oil and a generous grind of black pepper complete the dish. Ideal to prepare in autumn, when potatoes are at their best, this dish is a true warm and tasty embrace.

  • White onions
  • to taste Extra virgin olive oil

Chicken preparation

Make sure the chicken is clean and free of residual feathers. Cut the chicken into pieces of similar size and set aside.

Preparation of potatoes and onions

Peel the potatoes and cut them into wedges that are not too thin. Clean the white onions and cut them in half or in quarters, depending on their size.

Browning the onions

Insert the onions into the bowl and chop for 3 seconds at speed 5. Add the extra virgin olive oil and sauté for 3 minutes at 120°C at speed 1.

Cooking chicken and potatoes

Add the potato wedges and chicken pieces to the bowl. Season with salt and freshly ground black pepper. Cook for 10 minutes at 100°C in reverse rotation at speed 1.

Transfer to baking tray and baking in oven

Transfer the contents of the bowl to a baking tray. Distribute the chicken, potatoes and onions evenly. Bake in a preheated oven at 180°C for about 40 minutes, or until the chicken is golden brown and the potatoes are tender.
