Description

This hearty deer stew is an absolute highlight for the cold season! I always make it when I get deer shanks. The meat becomes wonderfully tender and juicy, while the herbs and beans contribute a great variety of flavors. I particularly like the combination of parsley, coriander, chives and dill. The kidney beans make the stew nice and filling. A braised dish that tastes almost even better the next day! Perfect for a cozy dinner with friends or family.

Ingredients (18 ingredients)

  • 4 x Deer shanks
  • 6 x Onions
  • 3 x Red onions
  • 3 x Yellow onions
  • 1 x Leek stalk
  • 1 Bündel Spring onions
  • 2 Bündel Smooth parsley
  • 1 Bündel Coriander
  • 1 Bündel Chives
  • 0.5 Bündel Dill
  • 150 Gramm Leaf spinach
  • 500 Gramm Kidney beans
  • 3 Esslöffel Dried fenugreek leaves
  • 5 x Dried limes
  • 2 Teelöffel Turmeric
  • 1 Stück Clarified butter
  • 1 x Salt
  • 1 x Pepper

Preparation (7 steps)

Prepare onions

Thermomix® Setting

Peel and quarter the onions. Then add to the mixing bowl and chop for 5 sec./speed 5. Transfer and set aside.

Sear meat

In a large pot or Dutch oven, sear the meat on all sides and let it brown well. Add the prepared onions and sauté until translucent. Add turmeric and deglaze with one liter of water. Bring to a simmer.

Chop herbs, leek and spring onions

Clean and coarsely chop the leek and spring onions. Wash and coarsely chop the fresh herbs. Add everything to the mixing bowl and chop for 5 sec./speed 5. Transfer and set aside.

Sauté herb mixture

Heat some clarified butter in a pan. Sauté the chopped herb mixture in it until it collapses. Add the fenugreek and the dried limes. Crack the limes so that the broth penetrates and releases the flavor.

Let the stew simmer

Add the herb mixture to the meat in the pot. Simmer over low heat for about 1.5 hours.

Add kidney beans

Add the kidney beans and simmer for another hour.

Reduce and season the stew

Reduce somewhat without the lid for the last half hour and season with pepper and salt.
