Description

This high-protein cottage cheese flatbread with pesto and arugula is quick to prepare in the Thermomix®. The main ingredients are cottage cheese, eggs, pesto, arugula, and cherry tomatoes. This gluten- and lactose-free dish is suitable as a light breakfast, finger food, or main course. In 50 minutes, including 20 minutes of prep time, you get 2 servings. Ideal for student cooking and anyone looking for a healthy, Mediterranean meal with few ingredients.

  • 200 g Cottage cheese
  • 2 Stück Eggs size M
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 1 TL Oregano
  • 4 EL Green pesto
  • 10 g Arugula
  • 100 g Cherry tomatoes
  • 50 g Mini mozzarella balls

Preparation (4 steps)

Prepare the cottage cheese mixture

30 sec/Speed 5

Place 200 g cottage cheese, 2 eggs size M, salt, pepper, and 1 tsp oregano in the mixing bowl and purée for 20 sec/speed 5. If necessary, scrape down the sides with the spatula and purée again for 10 sec/speed 5 until a homogeneous mixture is formed.

Bake the cottage cheese flatbread

Preheat the oven to 200°C top/bottom heat. Place the cottage cheese mixture on a baking sheet lined with baking paper and spread evenly (not too thinly). Then bake for 25-30 minutes until the flatbread is golden brown.

Top the cottage cheese flatbread

Let the baked cottage cheese flatbread cool slightly and carefully remove it from the baking paper. Then spread with 4 tbsp green pesto and top with 10 g arugula, 100 g halved cherry tomatoes, and 50 g mini mozzarella balls.

Serve

Fold the topped cottage cheese flatbread together and serve immediately.
