This seafood and artichoke paella is a traditional Spanish dish that is always a hit at home. The combination of rice with the flavor of fresh seafood and seasonal artichokes is simply delicious.   • 300 gr prepared seafood paella
  • 2 piece garlics
  • 0.5 piece green pepper
  • 0.5 piece leek
  • 4 piece artichokes

Prepare all the ingredients: weigh the rice, measure the fish stock, have the prepared seafood paella ready, peel the garlic, cut the green pepper, the leek and clean and chop the artichokes.

Chop garlic and pepper

Paella, that emblematic dish of Spanish cuisine, evokes memories of summers on the coast, family gatherings around a table full of laughter and the unmistakable aroma of saffron. This version, with fresh seafood and seasonal artichokes, is one of my favorites, a personal reinterpretation of a classic that is always a success. Round rice, the base of every good paella, is crucial to absorb all the flavors of the fish stock and the juices released by the seafood. The broth, preferably homemade, provides the depth of flavor that defines this dish. The prepared seafood paella, a mixture of prawns, mussels, squid and other treasures of the sea, adds the texture and salty flavor that contrast wonderfully with the sweetness of the artichokes. Artichokes, cleaned and chopped, bring an earthy and slightly bitter touch that balances the richness of the seafood. The sofrito, the aromatic base of the paella, is built with garlic, green pepper and leek, ingredients that complement each other to create a symphony of flavors. The food coloring, a pinch only, is optional, but it helps to give the paella that characteristic golden color. Preparation in the Thermomix® greatly facilitates the process. It is important to respect the cooking times so that the rice is perfect, creamy but not mushy. Turning to the left is essential to prevent the rice from breaking during cooking. If you don't have prepared seafood, you can use fresh seafood and add it at the last moment so that it doesn't overcook. For a vegetarian version, you can substitute the seafood with assorted mushrooms, green beans and peas. As for the spices, you can add a pinch of sweet or spicy paprika for an extra touch of flavor. Paella is traditionally served in the same paellera where it is cooked, accompanied by a few slices of lemon to squeeze on top. A fresh green salad and a good white wine are the perfect complement to this delicious meal. If there is any paella left over, it can be stored in the refrigerator for a couple of days. To reheat, add a little broth so it doesn't dry out. You can also prepare the sofrito in advance and store it in the refrigerator until the time to cook the paella.
