Description

This cinnamon swirl bread from the Thermomix® is a delicious bread and roll recipe with yeast, flour, milk and cinnamon. Preparation with the Thermomix® takes about 225 minutes and yields 12 servings. Ideal as a festive breakfast, winter dessert or for baking during the Christmas season. The recipe is suitable for anyone looking for a special bread for family and friends.

Ingredients (12 ingredients)

  • 125 g Butter
  • 150 ml Whole milk
  • 20 g Yeast (fresh)
  • 150 g Sugar
  • 375 g Wheat flour (Type 405)
  • 1 Prise(n) Salt
  • 2 Eggs (size M)
  • Butter and flour for the pan
  • 1.5 TL Cinnamon (ground)
  • Flour for the work surface
  • 75 g Butter
  • 100 g Sugar

Preparation (14 steps)

Melt butter

Put 125 g butter into the mixing bowl and melt for 3 min./50°C/speed 2.

Prepare yeast

Put 150 ml whole milk in a small saucepan and heat slightly (do not boil!). Dissolve 20 g fresh yeast with a pinch of sugar in the warm milk.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 375 g wheat flour, 50 g sugar and 1 pinch of salt into the mixing bowl. Add 2 eggs and the melted butter and the milk-yeast mixture. Knead for 2 min./kneading setting.

Let dough rise

Remove the dough from the mixing bowl, put in a bowl, cover with a clean kitchen towel and let rise at room temperature for about 1 hour.

Prepare loaf pan

Grease a loaf pan (approx. 25 cm) with butter and dust with a little flour.

Melt butter (filling)

Put 75 g butter into the mixing bowl and melt for 2 min./50°C/speed 2.

Prepare sugar-cinnamon mixture

Mix 100 g sugar and 1.5 tsp cinnamon in a small bowl. Set aside 1 tbsp of the melted butter and 1 tbsp of the sugar-cinnamon mixture.

Roll out and cover dough

Knead the dough well again and then roll it out on a lightly floured work surface to a rectangle approx. 0.5 cm thick. Brush the dough with the melted butter and then sprinkle the sugar-cinnamon mixture over it.

Cut and stack dough

Cut the dough into thick strips that correspond to the width of the baking pan. Stack these strips on top of each other and cut into 4 roughly equal portions. Then place these “packages” upright in the loaf pan.

Let dough rise (second round)

Let the dough rise in the loaf pan again for about 1 hour.

Preheat oven

Preheat oven to 180 °C top and bottom heat.

Brush surface

Thermomix® Setting
30 sec/122°F/Speed 1 50

Brush the surface with the remaining butter (briefly heat this again in the mixing bowl for 30 sec./50°C/speed 1 so that it becomes liquid) and sprinkle with the remaining sugar-cinnamon mixture.

Bake

Slide the cinnamon bread into the oven in the lower third and bake for about 30-35 minutes, cover with a baking sheet if necessary. Use a wooden skewer to check whether the bread is baked through.

Let cool

Let cool in the pan for about 30 minutes before serving, then turn out of the pan.
