Description

This kohlrabi pakora recipe is a great alternative to classic vegetable fritters. The combination of crispy celeriac balls, pickled celeriac spirals, aromatic mushrooms and a creamy garlic dip is simply irresistible. I like to make the pakoras as a starter or finger food for parties. The preparation is a bit more complex, but the result is definitely worth it. The pakoras taste particularly good in autumn, when kohlrabi is in season. If you like it a little spicier, you can add a pinch of chili to the dip.

Ingredients (18 ingredients)

  • 1 piece Egg (Gr. M)
  • 1 clove Garlic
  • 1 tbsp Capers
  • 2 tbsp Apple vinegar
  • 250 ml Apple vinegar
  • 1 tsp Mustard
  • 200 ml Olive oil
  • Salt
  • Pepper
  • smoked paprika powder
  • 300 g Mushrooms (e.g. Shiitake or Champignons)
  • 150 ml roasted sesame oil
  • 500 g Kohlrabi
  • 50 g Sugar
  • 1 piece Onion
  • 2 tbsp Flour
  • 2 tbsp Cornstarch
  • 1.5 l Oil for frying

Preparation (12 steps)

Chop garlic

Put 1 clove of garlic into the mixing bowl and chop for 3 sec./speed 7. Scrape down with the spatula.

Prepare mayonnaise

Thermomix® Setting
10 sec/Speed 4

Put 1 egg yolk, chopped garlic, 1 tbsp chopped capers, 2 tbsp apple vinegar and 1 tsp mustard into the mixing bowl and stir for 10 sec./speed 4.

Emulsify mayonnaise

Thermomix® Setting
Speed 3

Slowly drizzle 200 ml olive oil into the mixing bowl with the blade running (speed 3) until a mayonnaise forms. Season with salt, pepper and smoked paprika powder and transfer to a bowl. Clean the mixing bowl.

Prepare mushrooms

Clean 300 g of mushrooms and cut into slices approx. 4 mm thick.

Cook mushrooms

15 min/176°F/Gentle stir speed/Linkslauf 80 Reverse

Put 150 ml roasted sesame oil into the mixing bowl and heat for 3 min./100°C/speed 1. Add mushrooms and 1 pinch of salt and cook for 15 min./80°C/gentle stir setting/reverse. Transfer to a bowl and let cool.

Prepare kohlrabi spirals

Peel the entire kohlrabi. Use a spiralizer to cut 200 g kohlrabi into spirals.

Cook kohlrabi spirals

Thermomix® Setting
1 min/212°F/Gentle stir speed/Linkslauf 100 Reverse

Put 250 ml apple vinegar, 125 ml water, 50 g sugar, salt and pepper into the mixing bowl and bring to the boil for 5 min./100°C/speed 1. Add kohlrabi spirals and simmer for 1 min./100°C/gentle stir setting/reverse. Transfer to a bowl and let cool.

Chop onion

3 sec/Speed 5

Peel, quarter and put 1 onion into the mixing bowl. Chop for 3 sec./speed 5. Scrape down with the spatula.

Mix kohlrabi and onion

Peel the remaining kohlrabi and cut into very fine strips or slice together with the chopped onion. Mix both with 1 pinch of salt in a bowl and leave to steep for approx. 5 minutes.

Prepare pakora dough

Add flour, starch and sesame and mix. Lightly whisk the egg white, add and mix everything well. Shape the mixture into 4 balls.

Fry pakora

Heat 1 ½ l oil in a pot or deep fryer to approx. 170 °C. Bake the kohlrabi balls in it until they are golden brown.

Arrange

Arrange kohlrabi pakora, kohlrabi spirals with the mayonnaise and mushrooms. Sprinkle kohlrabi spirals with smoked paprika powder.
