Description

This savoury puff pastry with tuna and vegetables is a delicious and original option for an appetiser or starter. The combination of tuna with mayonnaise, cream cheese and mustard creates a creamy and tasty filling, which is perfectly complemented by tomato, onion and olives. It is very easy to prepare with the Thermomix® and perfect for any occasion. Go ahead and try this recipe and surprise your guests! It is prepared in a short time and is ideal for an informal meal or a quick dinner. You can also vary the filling ingredients according to your tastes.

Ingredients (8 ingredients)

  • 4 piece empanada dough circles
  • 120 gramos tuna in brine
  • 1 piece small tomato
  • 1 piece small onion
  • 2 cucharadas soperas mayonnaise
  • 2 cucharadas soperas spreadable cheese
  • 1 cucharada sopera mustard
  • 4 piece olives

Preparation (9 steps)

Chop and soften the onion

Thermomix® Setting

Peel 1 small onion and place it in the Thermomix bowl. Chop for 3 seconds/Stufe 5. Remove the chopped onion from the bowl and place it in a heat-resistant container. Cover with boiling water and let it sit for 5 minutes. Drain the onion in a colander and rinse with cold water. Repeat the blanching process 2 or 3 times to soften the flavour.

Prepare the tuna mixture

Open 1 can of tuna in brine (120 grams), drain the water and place the tuna in a bowl. Add 2 tablespoons of mayonnaise, 2 tablespoons of spreadable cheese and 1 tablespoon of mustard. Mix all the ingredients well with a spatula until you obtain a homogeneous paste. Set aside.

Cut the tomato

Wash 1 small tomato and cut it into small cubes. Remove the seeds to prevent the filling from becoming too moist. Save the seeds for another preparation.

Incorporate ingredients into the filling

Add the cubed tomato, sliced olives (4 units) and softened onion to the bowl with the tuna mixture. Gently mix all the ingredients. Refrigerate the preparation while continuing with the following steps.

Bake the empanada dough circles

Preheat the oven to maximum temperature (approximately 200°C). Arrange the 4 empanada dough circles on a previously greased baking tray. Prick the dough circles with a fork to prevent them from puffing up. Bake for 4 minutes.

Brown the other side of the dough circles

Be careful not to burn yourself, turn the empanada dough circles over and bake for 4 more minutes to brown the other side.

Assemble the puff pastry

Alternate 1 browned empanada dough circle with the cold tuna filling until you reach the last empanada dough circle, which will be set aside without spreading with the filling.

Prepare the topping

Place the spreadable cheese and mayonnaise (amounts to taste) in the Thermomix bowl. Mix for 10 seconds/Stufe 3 to obtain a homogeneous cream.

Decorate the puff pastry

Spread the last layer of puff pastry with the cheese and mayonnaise mixture. Decorate with a pastry bag or with a spoon and a fork. Optionally, add chopped parsley, basil or the green part of the spring onion.
