Description

This trofie pasta dish is bursting with fresh flavors! The combination of purple sprouting broccoli, salty anchovies, fragrant garlic, and zesty preserved lemon creates a delightful Mediterranean-inspired meal. It's quick and easy to prepare, making it perfect for a weeknight dinner. The crispy chilli breadcrumbs add a wonderful texture and a touch of heat. I love how the lemon brightens up the whole dish. Feel free to add a sprinkle of Parmesan cheese for extra flavor. This recipe is a great way to enjoy seasonal vegetables and elevate your pasta game!

Ingredients (12 ingredients)

  • 8 piece anchovy fillets
  • 100 g butter
  • 2 piece red onions
  • 4 clove garlic cloves
  • 3 piece preserved lemons
  • 400 g trofie pasta
  • 300 g purple sprouting broccoli
  • 1 piece lemon
  • 2 tbsp olive or rapeseed oil
  • 150 g fresh breadcrumbs
  • 1 piece lemon
  • 2 pinch dried chilli flakes

Preparation (5 steps)

Prepare Anchovy and Onion Base

10 min/248°F/Speed 1 120

Place 8 anchovy fillets and 100g butter into the mixing bowl and heat for 3 Min./50°C/Stufe 2 until the butter is melted and the anchovies have broken down. Add 2 red onions, quartered, and 4 garlic cloves to the mixing bowl and chop for 3 Sek./Stufe 5. Scrape down the sides of the mixing bowl with a spatula. Add 3 small preserved lemons, roughly chopped, and cook for 10 Min./120°C/Stufe 1.

Cook Pasta and Broccoli

Bring a large pot of salted water to a boil on the stovetop. Add 400g trofie pasta and cook for 5 minutes. Then, add 300g purple sprouting broccoli and cook for another 5 minutes, or until the pasta is cooked but still has a little bite. Reserve 1 mug of pasta water before draining the pasta and broccoli in a colander.

Prepare Chilli Breadcrumbs

Heat 2 tbsp olive or rapeseed oil in a frying pan over medium heat on the stovetop. Add 150g fresh breadcrumbs and stir regularly until the crumbs are golden and crispy. Then, add the zest of 1 lemon and 2 good pinches of dried chilli flakes.

Combine and Finish

3 min/212°F/Speed 2 100

Add the cooked pasta and broccoli to the mixing bowl with the anchovy sauce. Add a good splash of the reserved pasta water and the juice of 1 lemon. Cook for 3 Min./100°C/Stufe 2, stirring, until it’s silky smooth and coats the pasta. Check and adjust the seasoning if necessary.

Serve the pasta scattered with the crispy chilli crumbs.
