Description

I love this apple pie with lingonberries! The combination of juicy apples and the slightly tart note of the lingonberries is simply unbeatable. Thanks to the preparation in the Thermomix®, the dough is super quick and easy. The cake is perfect for Sunday coffee or as a festive dessert in autumn and winter. It can also be prepared well in advance and stays fresh for a few days. An absolute must for all cake lovers! Be sure to try it out, you will be thrilled!

Ingredients (12 ingredients)

  • 6 Apples
  • 2 EL Lemon juice
  • 175 g soft Butter or margarine
  • 175 g Sugar
  • 1 Pck. Vanilla sugar
  • Bitter almond flavor
  • 4 Eggs (size M)
  • 300 g Flour
  • 1 Pck. Baking powder
  • 200 g Wild lingonberries (jellied)
  • 2 EL Apricot jam
  • 1 EL Powdered sugar

Preparation (9 steps)

Prepare apples

Peel, quarter, core and slice the apples. Sprinkle with lemon juice to prevent them from browning.

Mix butter, sugar and vanilla sugar

Put the soft butter or margarine, sugar and vanilla sugar into the mixing bowl and mix for 2 min./speed 4.

Add eggs and flavor

Thermomix® Setting
30 sec/keine/Speed 4

Add the eggs and bitter almond flavor and mix for another 30 sec./speed 4.

Mix flour and baking powder

Thermomix® Setting
1 min/keine/Speed 4

Mix the flour and baking powder and add to the mixing bowl. Mix for 1 min./speed 4.

Pour dough into mold

Pour the dough into a greased and floured springform pan (26 cm diameter).

Spread apples and lingonberries

Spread the apple slices and lingonberries on the dough.

Bake cake

Bake the cake in a preheated oven at 180°C (top/bottom heat) for approx. 45 minutes.

Heat apricot jam

Thermomix® Setting
2 min/122°F/Speed 2 50

Put the apricot jam in the mixing bowl and heat for 2 min./50°C/speed 2.

Brush cake

After baking, brush the cake with the warmed apricot jam and dust with powdered sugar.
