Description

Spicy potatoes are a classic of Spanish cuisine, and with the Thermomix® they are prepared very easily! This recipe allows you to enjoy potatoes that are crispy on the outside and tender on the inside, accompanied by a homemade spicy sauce with a spicy touch that you will love. I often prepare them to share with friends and family, they are always a success! The key is to fry the potatoes in two stages so that they are perfect. In addition, the sauce can be adjusted to taste, adding more or less tabasco according to your preference for spiciness. Go ahead and try this homemade version, I assure you you won't regret it! They are ideal for a tapas night or as an accompaniment to any dish.

Ingredients (8 ingredients)

  • 1.2 kg potatoes
  • 1 piece egg
  • 250 ml oil
  • 1 clove garlic
  • tabasco
  • salt
  • 1 tsp paprika
  • 1 cucharada ketchup

Preparation of the spicy sauce

20 Seg./Vel. 5, 3 min/99°F/Vel. 4, 10 Seg./Vel. 3 37

In the Thermomix bowl, add 250 ml of oil, 1 egg, a pinch of salt and 1 clove of garlic. Program 20 seconds/Speed 5. Then, program 3 minutes/37°C/Speed 4. Add 1 teaspoon of paprika, a few drops of tabasco (to taste) and 1 tablespoon of ketchup. Mix well by programming 10 seconds/Speed 3. Reserve the covered sauce in the fridge.

Potato preparation

Cut 1.2 kg of potatoes into medium dice and leave them submerged in water to remove the starch. Drain and dry the potato dice well.

Frying the potatoes (outside the Thermomix)

In a deep fryer or frying pan with plenty of hot oil, fry the potato cubes first at a medium temperature until they are soft. Then, raise the temperature to brown them. This step is carried out outside the Thermomix to obtain the desired crispy texture.

Serve

Drain the potato cubes on absorbent paper, plate, salt and serve with the spicy sauce on top.
