Description

This pear cake with bacon is an unusual but delicious combination of sweet and savory. The juicy pears, salty bacon, and creamy vanilla sauce harmonize perfectly. I especially like to make this cake in the fall when pears are in season. It is ideal for a brunch or as a special dessert. The preparation takes some time, but the result is worth it. A tip: Use ripe but firm pears for the best taste.

Ingredients (10 ingredients)

  • 450 ml Milk
  • 1 cube Yeast
  • 7 tbsp Sugar
  • 1 kg Wheat Flour Type 405
  • 9 piece Eggs
  • 200 g Butter
  • 2 kg Pears
  • 20 slice Bacon
  • 2 Schote Vanilla
  • 200 ml Cream

Preparation (6 steps)

Heat Milk and Prepare Yeast

3 min/99°F/Speed 1 37

Add 300 ml milk to the mixing bowl and heat for 3 min./37°C/speed 1. Crumble in the yeast cube, add 1 tbsp sugar and stir for 15 sec./speed 2. Then let it rest in the mixing bowl for 15 minutes.

Prepare Dough

Thermomix® Setting
2 min/Kneading speed

Add 1 kg wheat flour, 3 tbsp sugar, 3 eggs, 200 g butter and the yeast-milk mixture to the mixing bowl and knead for 2 min./kneading level to a smooth dough. Transfer the dough to a bowl, cover and let rise in a warm place for 45 minutes.

Prepare Pears

Thermomix® Setting
15 min/212°F/Speed 1 100

Peel 2 kg pears, remove the core and cut into cubes. Place the pear cubes with 1 tbsp sugar and some water in the mixing bowl and simmer for 15 min./100°C/speed 1. Then transfer the pears with the liquid to a bowl.

Layer Cake

Line a roasting pan (with a lid) with 20 slices of bacon. Distribute the simmered pears with the liquid on top. Spread the yeast dough evenly over it. Let the dough rise again for 30 minutes.

Prepare Vanilla Sauce

Thermomix® Setting
8 min/194°F/Speed 2 90

Put 150 ml milk, 200 ml cream, 2 tbsp sugar and the pulp of 2 vanilla pods into the mixing bowl. Also add the scraped vanilla pods and bring to a boil for 8 min./90°C/speed 2. Remove the vanilla pods. Separate 6 eggs and whisk the egg yolks. Gradually add the vanilla milk to the egg yolks, stirring constantly. The sauce should thicken.

Bake in the Oven

Preheat the oven to 180 °C top/bottom heat. Place the roasting pan with the lid closed (grease the lid) in the oven and bake for 45 minutes.
