  • 1 piece medium-sized radicchio
  • 140 g speck in stick
  • 50 g walnuts
  • 40 ml balsamic vinegar
  • extra virgin olive oil
  • fine salt
  • chopped walnuts for decoration

Chop the walnuts

Insert 50 g of walnuts into the bowl and chop coarsely for 5 Sec./Stufe 5. Transfer the chopped walnuts to a bowl and set aside.

Prepare the radicchio

Clean 1 medium radicchio and cut it into thin strips. Set aside.

Brown the speck

In a pan, heat a drizzle of extra virgin olive oil and brown 140 g of diced speck until crispy. Remove the speck from the pan and set aside, leaving the oil in the pan.

Wilt the radicchio

In the same pan where the speck was browned, add the radicchio cut into strips and cook over medium heat for about 5 Min./120°C/Stufe 1, stirring occasionally, until wilted. Adjust salt to taste.

Deglaze with balsamic vinegar

Add 40 ml of balsamic vinegar to the wilted radicchio and cook for 2 Min./100°C/Stufe 1, stirring gently, until the vinegar has slightly thickened.

Cook the penne

Meanwhile, cook 320 g of ridged penne in plenty of boiling salted water according to the instructions on the package. Drain the penne al dente.

Mix the pasta

Pour the drained penne into the pan with the radicchio and balsamic vinegar. Add the browned speck and the chopped walnuts. Mix everything together for 2 Min./90°C/Linkslauf Stufe 1, stirring gently to blend the flavors.
