Description

This recipe for stuffed peppers in tomato sauce is a real treat! The peppers, filled with creamy cheese, are served in an aromatic tomato sauce. I like to make this dish when I have guests because it can be prepared well in advance. The slight spiciness of the peppers harmonizes wonderfully with the sweetness of the tomatoes. An absolute highlight are the fried peppers, which get a great texture thanks to the egg coating. Served with fresh parsley, it is a feast for the senses! Ideal for a cozy evening with friends or family.

Ingredients (12 ingredients)

  • 4 piece Poblano chilies (or green bell peppers)
  • 400 g grated Oaxaca cheese (or grated Mozzarella)
  • 4 piece Tomatoes
  • 1 piece Onion
  • 2 clove Garlic
  • 250 ml Broth
  • 2 tbsp Oil
  • Salt
  • Pepper
  • 4 piece Eggs
  • 50 g Wheat flour Type 405
  • 200 ml Sunflower oil

Preparation (7 steps)

Prepare peppers

Roast the peppers in a pan without fat from all sides until the skin blisters. Seal the hot peppers in a can and let them rest for 15 minutes. Then carefully rub the skin off the peppers with kitchen paper. Cut the peppers lengthwise on one side and carefully remove the core. The stem should remain. Fill the peppers with the cheese.

Prepare tomatoes, onion and garlic

Halve the tomatoes and remove the stalk. Peel the onion and garlic. Roughly chop the onion and halve the garlic. In a pan without fat, roast on the cut surfaces for about 3 minutes over high heat.

Puree tomato sauce

Put the roasted tomatoes, onion and garlic together with the broth into the mixing bowl and puree for 30 sec./speed 10.

Cook tomato sauce

Add 2 tbsp oil to the mixing bowl and add the pureed tomato sauce. Cook for 10 min./100°C/speed 1. Season with salt and pepper.

Prepare eggs

Separate the eggs and whisk the egg yolk with some salt and pepper. Beat the egg white until stiff and fold into the egg yolk. Put the egg mixture in a deep plate. Put the flour in another deep plate.

Fry peppers

Heat oil in a pan. First carefully flour the peppers, then coat them with the egg mixture. Fry from all sides for about 3 minutes each.

Serve

Serve the fried peppers on a mirror of the tomato sauce. Sprinkle with chopped parsley.
