Description

This savory potato-vegetable-pan is real soul food! With the Thermomix® it is prepared in no time and tastes great to the whole family. The combination of potatoes, peppers, onions and a spicy sauce makes this dish an absolute highlight. I love how quick and easy this pan is to prepare, perfect for a stressful evening. The kidney beans and corn provide an extra serving of satiating fiber. A great vegetarian dish that will also convince meat lovers! Feel free to vary with other vegetables, depending on what the fridge has to offer.

Ingredients (13 ingredients)

  • 6 piece small potatoes (firm cooking)
  • 2 piece Onions
  • 2 clove Garlic
  • 2 piece Peppers
  • 2 tbsp Sunflower oil
  • 1 can Corn (285 g)
  • 1 can Kidney beans (400 g)
  • 1 can Chopped tomatoes (400 g)
  • 1 tsp Paprika powder
  • 1 tsp Chili powder
  • 0.5 tsp Cumin (ground)
  • to taste Salt
  • to taste Pepper

Preparation (5 steps)

Chop onions and garlic

Thermomix® Setting
3 sec/Speed 5

Add 2 peeled and quartered onions and 2 cloves of garlic to the mixing bowl and chop for 3 sec./level 5. Use the spatula to push everything down from the edge.

Sauté onions and garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp sunflower oil and sauté for 3 min./120°C/level 1.

Prepare potatoes and peppers

Peel 6 small, firm-cooking potatoes and cut into approx. 1 cm cubes. Wash 2 peppers, core them and also cut them into approx. 1 cm cubes.

Add potatoes and peppers

Thermomix® Setting
5 sec/Speed 4

Add the diced potatoes and peppers to the mixing bowl and chop for 5 sec./level 4. Use the spatula to push everything down from the edge.

Add remaining ingredients and simmer

15 min/212°F/Linkslauf Speed 1 100 Reverse

Add 1 can of corn (285 g), 1 can of kidney beans (400 g), 1 can of chopped tomatoes (400 g), 1 tsp paprika powder, 1 tsp chili powder, 0.5 tsp cumin (ground), salt and pepper and simmer for 15 min./100°C/reverse rotation level 1.
