Description

This chicken with candied orange in tagine is a dish rich in flavors and aromas, perfect for autumn or winter evenings. The tender chicken meat goes perfectly with the sweetness of the candied oranges and oriental spices. I often prepare it when I have guests for dinner, because it is a dish that always makes a great impression. The preparation requires some time, but the result is guaranteed. A tip? Serve it with couscous or basmati rice for a complete and satisfying meal. A real comfort food!

Ingredients (15 ingredients)

  • 1.5 kg Chicken pieces
  • 3 piece Oranges
  • 1 tbsp Orange blossom water
  • 3 tbsp Extra virgin olive oil
  • 2 piece Onions
  • 1 bunch Fresh coriander
  • 1 pinch Black pepper
  • 1 packet Saffron
  • 1 piece Cinnamon stick
  • 0.5 tsp Cinnamon powder
  • Ginger (quantity to taste)
  • 3 tbsp Sugar
  • 1 piece Butter (small)
  • 1 pinch Salt
  • 500 ml Water

Preparation (8 steps)

Chicken preparation

Wash the chicken pieces thoroughly and dry them with kitchen paper.

Brown the chicken with the spices

Thermomix® Setting
5 min/248°F/Speed 1 120

Put the chicken pieces in the Thermomix bowl. Add ginger (quantity to taste), saffron (one sachet), black pepper (a pinch) and salt (a pinch). Brown for 5 Min./120°C/Stufe 1.

Cooking the chicken

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 500 ml of water to the bowl and bring to a boil for 10 Min./100°C/Stufe 1.

Adding onions, coriander and cinnamon

Thermomix® Setting
45 min/212°F/Speed 1/Linkslauf 100 Reverse

Add 2 onions cut into thin slices, 1 bunch of chopped coriander, 3 tablespoons of extra virgin olive oil and 1 cinnamon stick to the bowl. Cook for 45 Min./100°C/Stufe 1/Linkslauf.

Sauce reduction

Thermomix® Setting
15 min/Varoma/Speed 2 Varoma

Remove the chicken from the bowl and set aside. Let the sauce reduce for 15 Min./Varoma/Stufe 2, without the measuring cup, to promote evaporation.

Caramelize the oranges

Peel 3 oranges and cut them into four parts. Carefully dry the orange pieces. Put them in a pan (not in the Thermomix!) with 1 tablespoon of orange blossom water, 3 tablespoons of sugar, 1 piece of butter and ½ teaspoon of cinnamon powder. Let it caramelize over low heat.

Heat the chicken in the sauce

Thermomix® Setting
5 min/212°F/Speed 1/Linkslauf 100 Reverse

Put the chicken back in the bowl with the sauce and heat for 5 Min./100°C/Stufe 1/Linkslauf.

Plating

Place the chicken pieces on a serving dish, pour over the creamy sauce and arrange the candied orange pieces on top.
