Description

This dish of chicken stewed with olives and anchovies is a true Mediterranean delight. I often prepare it for a Sunday lunch with family, and it is always a hit. The combination of the salty flavors of anchovies and black olives, with the sweetness of the onion and the acidity of the vinegar, creates a perfect balance. Ingredients (13 ingredients)

  • 1 piece Chicken
  • 12 piece Black olives
  • 1 piece Onion
  • 4 c. à soupe Oil
  • 2 c. à soupe Vinegar
  • 10 cl Dry white wine
  • 1 feuille Bay leaf
  • 1 pinch Dried oregano
  • Salt
  • Pepper
  • 2 filets Common anchovy
  • 2 clove Garlic
  • 10 cl Vinegar

Preparation (10 steps)

Preparing the ingredients

Cut the chicken into pieces. Season with salt and pepper. Set aside.

Chop the onion

Put 1 onion in the bowl and chop 3 Sec./Level 5.

Sauté the onion

Add 4 tbsp of oil to the bowl and sauté the chopped onion 3 Min./120°C/Level 1.

Add the chicken, wine and vinegar

Add the chicken pieces, 10 cl of dry white wine, 2 tbsp of vinegar, 1 bay leaf, 1 pinch of dried oregano, salt and pepper to the bowl. Mix gently with the spatula.

Simmer the chicken

30 min/212°F/Speed 1/Linkslauf 100 Reverse

Cover and simmer 30 Min./100°C/Level 1/Left rotation.

Prepare the olives

Meanwhile, blanch the olives for 2 min in boiling water, drain them and slice them. Set aside.

Add the olives

Add the sliced olives to the chicken and cook for another 10 Min./100°C/Level 1/Left rotation.

Prepare the anchovy sauce

Put 2 common anchovy fillets and 2 cloves of garlic in the bowl and chop 5 Sec./Level 7.

Dilute the sauce

Add 10 cl of vinegar and mix 10 Sec./Level 3.

Coat the chicken

Remove the chicken pieces and place them on a serving dish. Pour the anchovy sauce over the chicken just before serving.
