Description

This rustic chicken with potatoes and olives is a heartwarming dish, perfect for autumn evenings. The tender meat, golden potatoes and black olives create an irresistible combination of flavors. I often prepare it when I have guests for dinner, because it is simple to make and always makes a great impression. The secret lies in the slow braising, which allows the flavors to blend perfectly.   • Chicken
  • to taste Tomato paste
  • 1 piece Onion
  • Potatoes
  • Black olives
  • Tomato purée
  • Hot pepper
  • Chicken broth
  • Rosemary
  • Extra virgin olive oil (EVO)
  • Seed oil for frying
  • Salt

Preparation (9 steps)

Preparing the potatoes

Peel the potatoes and cut them into rather coarse sticks. Rinse the potatoes under running water to remove some of the excess starch and dry them well.

Browning the chicken

In a pan, brown the chicken pieces with a drizzle of extra virgin olive oil over low heat on all sides until golden brown. Remove the chicken from the pan and set aside.

Chop the onion

Put an onion in the bowl and chop for 3 Sec./Stufe 5.

Sauté onion and chilli pepper

Add a drizzle of extra virgin olive oil, sliced chilli pepper and the chopped onion to the bowl. Sauté for 3 Min./120°C/Stufe 1.

Add tomato and concentrate

Thermomix® Setting

Add the tomato purée and tomato paste to the bowl. Mix for 5 Sec./Stufe 3.

Cooking the chicken in stew

Thermomix® Setting
30 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the browned chicken, chicken broth, rosemary and salt to the bowl. Cook for 30 Min./100°C/Stufe 1/Linkslauf.

Fry the potatoes

In a pan, fry the potatoes in seed oil at 170°C until golden brown. Dry the excess oil on absorbent paper and salt.

Combine potatoes and olives

Thermomix® Setting
10 min/212°F/Speed 1/Linkslauf 100 Reverse

Combine the fried potatoes and black olives in the bowl with the chicken. Add more chicken broth if necessary and cook for 10 Min./100°C/Stufe 1/Linkslauf, stirring gently with the spatula.

Adjust salt and serve

Adjust salt to taste. Serve hot, adding fresh rosemary if you like.
