Description

These pumpkin and potato meatballs are a delicious and vegetarian alternative to classic meat meatballs. The sweetness of the pumpkin perfectly matches the soft texture of the potatoes, creating a comforting and flavorful dish. I often prepare them in the fall, when the pumpkin is in season and more tasty. They are perfect as a tasty appetizer or as a light second course, accompanied by a fresh salad. The preparation is simple and quick, also ideal for those who have little time. A great idea to get children to eat vegetables! They can also be prepared in advance and cooked at the moment.

Ingredients (11 ingredients)

  • 300 g pumpkin
  • 300 g potatoes
  • 40 g water
  • 1 uova eggs
  • 60 g grated cheese
  • 100 g breadcrumbs
  • fine salt
  • pepper
  • nutmeg
  • spray olive oil
  • breadcrumbs

Preparation (7 steps)

Cubed pumpkin and potatoes

300 g of pumpkin, previously cut in half and deprived of seeds, and 300 g of peeled and cubed potatoes, are placed in a bowl.

Microwave cooking

Add 40 g of water to the bowl with the pumpkin and potatoes. Cover with food film and cook in the microwave at 800 W for 15 minutes. Check that the vegetables are soft, otherwise cook for another 5 minutes.

Reduce to puree

Remove the film and mash the pumpkin and potatoes with a fork or potato masher until a homogeneous puree is obtained.

Meatball dough

Thermomix® Setting

Add 1 egg, fine salt to taste, pepper to taste, nutmeg to taste, 60 g of grated cheese and 50 g of breadcrumbs to the puree. Mix well with the Thermomix: 20 Sec./Stufe 3.

Addition of breadcrumbs

10 sec/Speed 3

Gradually add the remaining breadcrumbs (about 50 g) until a workable mixture is obtained. Mix with the Thermomix: 10 Sec./Stufe 3.

Form the meatballs

Take small portions of dough and form the meatballs. Pass them in the breadcrumbs to taste until they are completely covered.

Arrangement and cooking

Arrange the meatballs on a baking sheet lined with baking paper and spray with spray olive oil to taste. Bake in a preheated ventilated oven at 200 °C for 15-20 minutes, until the meatballs are golden brown.
