Description

These meatballs with vegetables and potatoes are a comforting dish full of flavor, perfect for a family meal. The recipe, which I have adapted for the Thermomix®, is a homemade version of a classic. The combination of minced beef and pork, along with fresh vegetables such as carrot, green beans and asparagus, creates a delicious and nutritious stew. The potatoes, fried until golden brown, give it a crunchy and tasty touch. Ideal for cold days, this dish is easy to prepare and is always a success at home. Go ahead and try it!

Ingredients (13 ingredients)

  • 1 piece Mixed minced beef and pork
  • 1 piece carrot
  • 6 piece Green string beans
  • 6 piece Wild asparagus
  • 0.5 piece onion
  • 2 piece potatoes
  • Flour
  • Sunflower oil
  • 0.5 pastilla Beef broth
  • White wine
  • Salt
  • Ground pepper
  • 1 cucharada sopera cornstarch

Preparation (8 steps)

Vegetable preparation

Wash and cut the carrot, green beans, wild asparagus and onion into small pieces. Reserve.

Vegetable stir-fry

Thermomix® Setting
5 min/248°F/Velocidad 1 120

Add the chopped onion and 30 ml of sunflower oil to the Thermomix glass. Program 3 seconds/speed 5. Next, sauté for 5 minutes/120°C/speed 1.

Add the rest of the vegetables

Thermomix® Setting
8 min/Varoma/Velocidad 1 Varoma

Incorporate the carrot, green beans and wild asparagus into the glass. Program 8 minutes/Varoma/speed 1.

Sauce preparation

Thermomix® Setting
5 min/212°F/Velocidad 2 100

Add half a crumbled beef stock cube, a splash of white wine, salt and pepper to taste. Program 5 minutes/100°C/speed 2.

Thicken the sauce

Thermomix® Setting
3 min/212°F/Velocidad 2 100

Dissolve a tablespoon of cornstarch in a little cold water and add to the glass. Program 3 minutes/100°C/speed 2.

Fry the potatoes

Cut the potatoes into small cubes. In a separate pan, fry the potatoes in plenty of sunflower oil until golden brown. Remove and drain the excess oil on absorbent paper.

Fry the meatballs

Flour the meatballs. In a separate pan, fry the meatballs in sunflower oil over medium-high heat until golden brown. Remove and drain the excess oil on absorbent paper.

Incorporate potatoes and meatballs

Thermomix® Setting
5 min/194°F/Velocidad 1/Giro a la izquierda 90 Reverse

Add the fried potatoes and fried meatballs to the Thermomix glass with the vegetables and sauce. Program 5 minutes/90°C/speed 1/Reverse.
