Description

This Chicken Hunter Style is a hearty and aromatic dish that is perfect for a cozy evening. I like to make it when I invite friends over because it's so easy to prepare and always goes down well. The chicken is braised in a rich tomato sauce with olives, onions, carrots, celery and rosemary, giving it a wonderful flavor. Preparation with the Thermomix® makes it particularly easy, as the vegetables can be quickly chopped and sautéed. Served with fresh bread or pasta, it's an absolute highlight!

Ingredients (12 ingredients)

  • 1.2 kg Chicken pieces
  • 1 piece Onion
  • 1 piece Carrot
  • 1 Stange Celery stalk
  • 1 clove Garlic
  • 2 Zweige Rosemary
  • 100 ml Red wine
  • 400 g Peeled tomatoes
  • 100 g Black olives
  • Extra virgin olive oil
  • Pepper
  • Salt

Preparation (6 steps)

Prepare vegetables

Roughly chop 1 onion, 1 carrot and 1 stalk of celery and place in a large pot. Peel 1 clove of garlic and leave whole. Have 2 sprigs of rosemary ready.

Sauté vegetables

Add some olive oil to the pot and sauté the vegetables over medium heat. Add rosemary and garlic clove and fry for a few minutes.

Brown chicken

Add 1.2 kg of chicken pieces (Pollo in pezzi) to the pot, skin side down, and brown well on all sides.

Season and deglaze

Season the chicken with salt and pepper. Deglaze with 100 ml of red wine and let it reduce briefly.

Add tomatoes

Add 400 g of peeled tomatoes (pomodori pelati) and 100 g of black olives (olive nere). Mix everything well.

Let it simmer

Put the lid on and simmer the chicken over low heat for about 45-60 minutes until it is cooked through. Stir occasionally.
