Description

This Calabrian style stuffed chicken is a dish I often prepare when I want something tasty and comforting. The 'nduja and mozzarella filling makes the meat tender and stringy, while the tomato sauce adds a touch of sweetness and acidity that blends perfectly. The preparation is a bit laborious, but the end result is worth it. Perfect for a family dinner or with friends, this dish is a true triumph of Mediterranean flavors. It can be prepared in advance and cooked at the time, ideal for those who have little time. A true comfort food!

Ingredients (12 ingredients)

  • 4 piece Chicken breast
  • 1 slice Nduja
  • 200 g Mozzarella
  • 2 piece Eggs
  • 50 g Pecorino
  • 500 ml Tomato puree
  • 1 piece Onion
  • 1 bunch Thyme
  • 1 bunch Marjoram
  • 30 ml Extra virgin olive oil
  • 1 pinch Salt
  • 500 ml Frying oil

Preparation (10 steps)

Preparation of the sautéed base

Thermomix® Setting
3 min/248°F/Speed 1 120

Pour a drizzle of extra virgin olive oil into the bowl. Add a chopped onion and chop for 3 Sec./Stufe 5. Scrape down the sides with the spatula. Sauté for 3 Min./120°C/Stufe 1.

Cooking the tomato sauce

Thermomix® Setting
6 min/212°F/Speed 1 100

Add the tomato puree and a pinch of salt into the bowl. Cook for 6 Min./100°C/Stufe 1.

Preparation of the chicken breast

Beat the slices of chicken breast between two sheets of parchment paper with a meat tenderizer until flattened.

Stuffing the chicken

Lay the slices of chicken breast on the work surface. Cut a slice of 'nduja and place it on each slice of chicken. Close like a wallet and seal the edges by beating with the meat tenderizer.

Preparation of the breading

In a bowl, beat the eggs. In a second bowl, mix breadcrumbs, grated Parmesan cheese, thyme and marjoram.

Breading the chicken

Dip the stuffed chicken slices first in the beaten egg and then in the flavored breadcrumb breading.

Frying the chicken

Fry the chicken slices in hot oil (180-200°C) in a pan until golden brown on both sides. Drain on absorbent paper.

Assembly and gratin

Spread some tomato sauce on the bottom of a baking dish. Arrange the fried chicken slices in the baking dish and cover with the remaining tomato sauce.

Addition of the mozzarella

Squeeze the mozzarella to eliminate excess liquid and distribute it over the chicken.

Gratin in the oven

Bake in a preheated oven at 180°C until the mozzarella has melted and browned.
