Description

This provençal ratatouille is a sunny and flavorful dish, perfect to accompany your summer meals. I often prepare it with fresh vegetables from the market, which gives it an incomparable taste. The melting eggplant, the tender zucchini and the colorful peppers blend wonderfully with the juicy tomato and the fragrant herbs of Provence. It's a simple dish to make, ideal for a light lunch or a convivial dinner. You can serve it hot or cold, according to your preferences. A real treat for the taste buds!

Ingredients (9 ingredients)

  • 1 piece red pepper
  • 1 piece yellow pepper
  • 1 tbsp Herbs of Provence
  • 1 piece zucchini
  • 454 g tomato
  • 1 feuille Bay leaf
  • 1 clove Garlic
  • 1 piece eggplant
  • 1 piece onion

Preparation (5 steps)

Vegetable preparation

Peel and finely slice 1 onion. Wash and dice 1 red pepper and 1 yellow pepper. Wash and slice 1 zucchini. Wash and dice 1 lb of tomato. Dice 1 eggplant.

Searing the onion

Put the sliced onion in the Thermomix bowl with olive oil and sauté for 3 Min./120°C/Stufe 1.

Adding peppers and tomatoes

30 min/212°F/Speed 1 100

Add the diced peppers and diced tomatoes to the Thermomix bowl. Also add some herbs of Provence and 1 bay leaf. Cook for 30 Min./100°C/Stufe 1.

Cooking the eggplant and zucchini

In another container (not in the Thermomix), cook the diced eggplant and zucchini for 20 minutes uncovered. This step is not done in the Thermomix.

Assembly and end of cooking

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add the cooked eggplant and zucchini to the Thermomix bowl. Mix gently and cook for another 5 Min./100°C/Linkslauf Stufe 1.
