Description

These refried black beans are a comforting and flavorful dish, perfect to accompany any meal. The recipe, although simple, requires a bit of patience, as the beans need to be pressure cooked until tender. I usually prepare them in a pressure cooker and then lightly crush them to create a creamy texture. The sofrito of ají cachucha pepper, green pepper, garlic, and onion gives it a special and aromatic touch. A little dry wine and ground oregano further enhance the flavor. Ideal for a family meal or an informal dinner!

Ingredients (11 ingredients)

  • 500 gramos black beans
  • 6 piece ají cachucha pepper
  • 1 piece green pepper
  • 6 clove garlic
  • 1 piece onion
  • 1 hoja bay leaf
  • 1 tacita soybean oil
  • 1 cucharada salt
  • 1 pinch sugar
  • 1 cucharada dry wine
  • 1 pinch ground oregano

Preparation (5 steps)

Cook the beans

Wash the black beans and place them in a pressure cooker. Add water to the middle of the pot. Close the pot and cook over medium heat for 40 minutes.

Crush the beans

Once the beans are soft, pour them into the Thermomix bowl. Lightly crush for 10 seconds at speed 4, without removing the liquid, so that the grain makes a paste.

Chop the vegetables

Add the ajíes cachucha peppers, the green pepper, the garlic cloves, and the onion to the Thermomix bowl. Chop for 5 seconds at speed 5.

Sauté the vegetables

Add the soybean oil to the Thermomix bowl. Sauté the chopped vegetables for 5 minutes at 120°C in speed 1.

Combine the ingredients

Pour the crushed beans into the Thermomix bowl along with the vegetable sofrito. Add the bay leaf, salt, sugar, dry wine, and ground oregano. Cook for 15 minutes at 100°C in speed 2, without the measuring cup, so that the beans set.
