Description

This creamy rice dish with forest mushrooms and broccoli is an absolute highlight in autumn! I especially like to make it when I find fresh porcini mushrooms at the market. The broccoli provides a beautiful color and a crunchy texture, while the Parmesan gives the dish a savory note. It is a wonderfully filling and warming dish that is also easy to prepare. Perfect for a cozy dinner with friends or family. If you like, you can sprinkle some fresh parsley on top.

Ingredients (13 ingredients)

  • 2 piece Onions
  • 0.5 bunch Sage
  • 3 tbsp Olive oil
  • 1 piece Bay leaves
  • 350 g Risotto rice (e.g. Arborio)
  • to taste Salt
  • to taste Pepper
  • 800 ml Vegetable stock
  • 500 g Broccoli
  • 2 piece Porcini mushrooms
  • 100 g Grated Parmesan or vegetarian hard cheese
  • Grated Parmesan or vegetarian hard cheese
  • 25 g Butter

Preparation (8 steps)

Prepare onions and sage

Thermomix® Setting

Peel and quarter the onions and place in the mixing bowl. Chop for 3 sec./speed 5. Wash the sage, pat dry and cut into strips. Use the spatula to push everything down from the edge.

Sauté onions

Add 3 tablespoons of olive oil, the chopped onions and 1-2 bay leaves to the mixing bowl and sauté for 3 min./120°C/speed 1.

Sauté rice

Thermomix® Setting
2 min/248°F/Speed 1 120

Add 350 g risotto rice and the chopped sage and sauté for 2 min./120°C/speed 1 while stirring.

Cook risotto

20 min/212°F/Gentle stir speed/Linkslauf 100 Reverse

Season with salt and pepper. Add 2 jars (400 ml each) of vegetable stock and 200 ml of water and simmer for 20 min./100°C/gentle stir setting/reverse.

Prepare broccoli

In the meantime, clean the broccoli, wash it, cut it into small florets and cook in a separate pot with boiling salted water for about 12 minutes. Then drain in a sieve.

Prepare porcini mushrooms

Clean, wash and slice the mushrooms. Heat the remaining oil in a pan and briefly toss the porcini mushrooms in it.

Refine risotto

Add the broccoli, porcini mushrooms, 100 g grated Parmesan or vegetarian hard cheese and 25 g butter to the risotto in the mixing bowl and stir in for 2 min./60°C/speed 2/reverse.

Arrange the finished risotto on a plate and serve with some grated Parmesan or vegetarian hard cheese.
