Description

This creamy risotto with lime and prawns is a first course that I love to prepare for special dinners. The scent of lime blends perfectly with the delicacy of the prawns, creating an explosion of flavors in the mouth. The preparation is simple and quick, perfect also for those who do not have much time to dedicate to cooking. I often prepare it when I have guests and I want to make a good impression without stressing too much. A tip? Use very fresh prawns for an even more surprising result! Also great for a light and tasty summer dinner.

Ingredients (9 ingredients)

  • Vialone nano rice
  • Lime
  • Prawns
  • Butter
  • White wine
  • Vegetable broth
  • Extra virgin olive oil
  • Parsley
  • Salt

Preparation (7 steps)

Preparation of the prawns

Shell 8 prawns completely and cut them into coarse chunks. Set aside.

Toasting the rice

Put a knob of butter and a drizzle of extra virgin olive oil in the jug. Heat for 3 Min./120°C/speed 1. Add the vialone nano rice and toast for 3 Min./120°C/speed 1.

Deglazing with wine and lime

Thermomix® Setting
1 min/212°F/Speed 1 100

Deglaze the rice with white wine for 1 Min./Varoma/speed 1 without the measuring cup. Add the lime juice and cook for 1 Min./100°C/speed 1.

Cooking the risotto

Thermomix® Setting
10 min/212°F/Speed 1 100

Add boiling vegetable broth a little at a time and cook for 10 Min./100°C/speed 1. Halfway through cooking, add the chopped prawns and continue cooking for another 5 Min./100°C/speed 1, adding more boiling broth as the previous one is absorbed.

Final creaming

Thermomix® Setting
1 min/Speed 2

Off the heat, stir the risotto with a knob of butter for 1 Min./speed 2.

Sauté the prawns

Heat a drizzle of oil in a pan and sauté the prawns over high heat for a few minutes. Set aside.

Plating

Plate the risotto, garnishing each portion with the seared prawn tails and completing with a sprinkling of fresh chopped parsley.
